How to Make Tandulja Bhaji / Amaranthus Spinosus Leaves Stir Fry

Hello Foodies,
         I grew up by eating green leafy vegetables like Methichi Bhaji, Shepuchi Bhaji, Lal Mathachi Bhaji, Tanduljachi Bhaji, these green leafy vegetables have been a part of our diet since I was a kid. In English, Tandulja is known as Amaranthus, and bhaji means dry or stirs fry curry. Some use red chili powder to prepare this bhaji, but at home, we use green chilies. Some use peanuts or pulses while cooking tandulja. 


         In India(back home), we use to get green leafy vegetables according to their season of harvest. After moving to the USA, I found there are some veggies that we can get all around the year. And this tandulja is one of them. Every time I go to the Indian Grocery store, I buy Tandulja, Shepu(Dill Leaves), Methi(Fenugreek Leaves), Aambadi(Sour Green), and Lal Math(Red Spinach). And I plan our meal in a way so we can have these healthy veggies stir fry and gluten-free flatbread in our daily meal.

          Tandulja is loaded with lots of essential nutrients. It is a simple and easy way to make tandulja bhaji. The recipe uses just a handful of ingredients. The addition of onion adds a slight crunch to the tandulja leaves stir fry. Also, with every green leafy vegetable, stir fry garlic is a must. Garlic adds a smoky and absolutely delicious taste to stir fry recipes. It tastes awesome with Bhakri / Chapati. You can also pack this stir-fry in the tiffin box too.


Preparation Time: 10 Minutes; Cook Time: 15 Minutes
Each Serving of Tandulajachi Bhaji Contains 93 Calories.

Ingredients:
  • Tandulja Bhaji / Amaranthus Spinosus Leaves 1 bunch.
  • Onion 1 small, chopped
  • Garlic 6-7 cloves, crushed
  • Green chilies 5 to 6 strips, chopped.
  • Coriander Stems 2 Tbsp
  • Cumin Powder 1 Tsp
  • Salt 1 Tsp
  • Oil 2 Tsp
Instructions:
  • Pluck, Clean, and wash the tandulja leaves under the tap water.
  • Chop washed tandulja leaves and keep it aside.
  • Using a mortar pestle crush green chilies, coriander stems, and cumin seeds together and keep it ready.
  • Crush garlic cloves and chop onions and keep aside.
  • In a pan, heat oil and splutter cumin seeds.
  • Now, add crushed garlic and saute for a minute or until the raw smell of garlic goes away.
  • Add chopped onions and cook for 2-3 minutes or until it becomes translucent.
  • Then, add crushed green chilies paste and saute well.
  • Lastly, add chopped tandulja leaves and salt and mix them all well.
  • Sprinkle some water and cover and cook for about 6-7 minutes, keep stirring in between. 
  • After 6 minutes, water gets evaporated; once water gets evaporated, that means it's done.
  • Simple, healthy Amaranthus leaves stir fry, or Tanduljachi Bhaji is ready to serve. 
  • It tastes awesome with Bhakri or with Phulka/Chapati. Enjoy!!!

  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 93 calories, along with 11.7 g carbohydrates, 1 g dietary fiber, 4.5 g fats, and 4.68 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
