How To Make Panera Style Summer Corn Chowder in the Instant Pot

You can also make a big batch on the weekend, and you've got lunch prepared for the workweek.

Each bowl of corn chowder soup contains 252 Cal. 

Ingredients:
  • Corn 1 ½ Cups
  • Green Bell Pepper ½ Cup, chopped 
  • Potato ½ Cup, peeled and chopped
  • Carrots ½ Cup, grated 
  • Onion 1 small, finely chopped 
  • Garlic 3 cloves, grated
  • Bay leaves 2
  • All-Purpose Flour 2 Tbsp 
  • Black Pepper 1 Tsp
  • Cumin Powder 1 Tsp 
  • Salt 1 Tsp 
  • Paprika ½ Tsp 
  • Half and half 1 Cup
  • Cheddar Cheese 1 Cup, Grated 
  • Butter 2 Tbsp 
  • Coriander leaves / Cilantro 2 Tbsp 
  • Water/Vegetable stock 3 Cups
Instructions:
  • Turn on the saute mode of the instant pot and heat butter. 
  • Add onion, garlic, bay leaves, and sauté for 2-3 minutes and turn off the saute mode of the instant pot. 
  • Add Apf and mix well. 
  • Now, add sweet corn, potato, green pepper, carrots, black pepper, salt, cumin powder, paprika, and water/vegetable stock and stir well(deglaze). 
  • Close the lid and place the vent on the sealing position. 
  • Cook on Manual Mode(Hi) for 5 minutes and then the quick release of the pressure and open the lid.
  • Using the masher, mash the cooked mixture and mix well. 
  • Turn on the saute mode of the instant pot and pour half and half, Cheddar cheese and mix well and cook for a minute or two. 
  • Add coriander leaves, and delightful corn chowder is ready to serve. 
  • Serve hot with Cheddar-Jalapeno Bread. Enjoy!!! 

To Make it a Meal:
  • For an easy meal, serve corn chowder soup with a veggie burger or bean burgers on whole wheat Buns. 
  • You can pair it with Mediterranean salad/beans salad stuffed bread. 

My Take:
  • If you have leftovers, add milk as needed and heat it, then add paprika if required and salt to adjust the taste.
  • If you want a thicker and creamier soup, blend it.
  • You can totally skip adding flour and make it a gluten-free version of corn chowder.

  • The calorie count based on a 2000 calorie diet.
  • Per serving contains 252 calories, along with 23.1 g carbohydrates, 3 g dietary fiber, 22.2 g fats, and 11.13 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
