How to Make Mexican Street Corn/Elote in the Instant Pot
Hello Foodies,
        Corn on the cob cooked in the instant pot and is covered in savory flavors and a sprinkle of cilantro make this side dish absolutely splendid! It is the perfect recipe to enjoy on its own! I made this for dinner, and it made our meal. 

I served it with a Chicken Wings that was cooked in the Air Fryer and a baked/Air Fried potatoes. We ate the Corn last (i covered it with foil), and Dr.K loved it and said it was indeed the best Corn I’ve ever had! The flavor was excellent, and the Instant pot’s ease in preparation made it so quick and simple to make. I had this “Mexican Street Corn’ at a Bein Chido and have wanted to recreate the recipe ever since. And here it is, I made it, and this came out fantastic!!!

What is mean by Elote?
          In Central America and Mexico, an ear of Corn, on or off the plant, is called “elote”. This term is also used in Mexican and Central American communities in the United States. In some regions of Mexico, elotes are sold in the street by “eloteros” (people who walk around cities or towns with a cart selling elotes).

How to Make Mexican Corn(Elote)?
           Simply brush butter over the boiled Corn on the cob and generously sprinkle cotija cheese over the butter slathered boiled corn and sprinkle the seasoning and chopped cilantro. And the results are ridiculously great! So the creamy, spicy, and delicious Mexican Corn all ready, it’s the perfect light side for all that heavy summer potluck food.  Your guests will love this.


What is Cotija Cheese?
         Cotija cheese is a dry, salty cow’s milk cheese made in Mexico. Cotija is an enhancer. Take your dishes to the next level by crumbling or grating over Corn, tacos, or soups where you’d like to add a bit of saltiness and tang in flavor. Cotija does not melt. And to make Mexican Corn this Cotija cheese is perfect, but if you could not find you can use feta cheese, Parmesan or Pecorino Romano, these are works well, too. The secret of Mexican Corn is the cheese. It would be best if you found Cotija. It is the Mexican cheese, equivalent of grated parmesan, and you can find it in the refrigerated cheese section in some stores. 

What can I use instead of Cilantro/Coriander leaves?
          You can totally replace cilantro with basil, parsley, scallions, or chives would all be delicious instead.

What else I can use in the recipe:
           Mayo, yogurt, sour cream, or a combination of yogurt and sour cream would be delicious in this recipe. Just after greasing cooked Corn with butter, apply a layer of mayo, yogurt, sour cream, and then sprinkle seasoning and cheese.


Here are some more ways to use summer corn

Preparation and Cooking Time: 15 Minutes.
Each Mexican Corn on the cob Contains 250 Cal.

Ingredients:
  • Corn on the cob 3
  • Butter 2-3 Tbsp
  • Cotija Cheese ¼ Cup
  • Cajun Seasoning/ Chili pepper+cumin powder mixture 
  • Cilantro/Coriander leaves
  • Lime wedges for serving
  • Water 2 Cups

Instructions:
To Boil/Cook Corn on the cob in the Instant Pot:
  • Turn on the instant pot and add 2 cups of water.
  • Place the trivet and Corn on the trivet.
  • Close the lid of the instant pot and place the vent on the sealing position.
  • Cook on Manual Mode(Hi) for 3 minutes.
  • The natural release of pressure for 5 minutes and then release the remaining pressure manually.
  • Open the lid and take the Corn out.

Mix the mayo and sour cream, if you like and wanted to brush on the Corn (optional). 

To Make Mexican Corn:
  • While the Corn is still warm slather with butter (if you are using mayonnaise mix brush it after butter).
  • Squeeze lime juice over the Corn and shower with Cotija/Feta/Parmesan cheese. 
  • Season with Cajun Seasoning or chili and cumin powder mixture and cilantro.
  • Serve with extra lime wedges. Enjoy!!!

Pro Tip:
  • If boiled corns are not warm, then slather with butter, cheese, and seasoning and place it on the aluminum foil or parchment paper and broil for 3-4 minutes or until it becomes warm.

  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 250 calories, along with 34 g carbohydrates, 1.5 g dietary fiber, 12.5 g fats, and 6.9 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
