How to Make Potli Samosa in the Air Fryer

Who does not love crispy and yummy snacks along with a piping hot tea/coffee in this beautiful rainy season? It is already raining pleasantly, and samosa is just too much fun. I gave a healthy twist to this deep-fried samosa and air fried them. Making Potli Samosa is an extremely simple and easy recipe to follow and worth the effort. These crispy and yummy veg potli samosa can be great as a snacks/starters/appetizers.
These potli samosas are made with potato-peas masala stuffing, but you can use any filling like mawa, paneer, tofu, roasted dal, chicken, or mushrooms, etc.

What Is Potli Samosa?
Potli Samosa is a deep-fried snack/appetizer that pairs best with tangy, spicy, and sweet chutney and piping hot tea. It is generally deep-fried, but I wanted to try making an air Fryer healthy version. And you know how I love my air fryer and air fried food. Here, Potli means Packet or Purse / Money Bags. It is a deep-fried snack stuffed with spicy and tasty potato-green peas stuffing; hence it is known as vegetable potli samosa or veg potli samosa. It is referred to as samosa because the stuffing inside the potli and the regular samosa are the same.

Ingredients:
To Prepare Dough:
- 1 ½ Cups All-Purpose Flour/Maida
- ½ Tsp Salt
- ½ Tsp Carom Seeds
- 1 Tbsp Milk Powder(you may use baking powder 1 Tsp)
- 1 Tbsp Ghee/Butter, melted
- Oil few drops to grease the dough
- Water to knead the dough.
To Prepare Stuffing For Samosa:
- 2 Tsp Oil
- ½ Tsp Cumin Seeds
- 2 Strips Green Chillies, finely chopped
- 1 Tsp Ginger Paste
- ½ Cup Green Peas
- 2 Potatoes, boiled, peeled and mashed
- 1 Tsp Red Chili Powder
- ½ Tsp Garam Masala
- ½ Tsp Coriander Powder
- ½ Tsp Turmeric
- 1 Tbsp Amchur powder
- 1 Tsp Salt
- 2 Tbsp Coriander leaves, chopped
- 1-2 Tbsp Milk to give a Milk wash
Instructions:
To Make the Dough for Potli Samosa:
- In a bowl, add all-purpose flour, ghee, salt, milk powder, and carom seeds and mix well.
- Add water and knead to make a soft dough.
- Apply some oil and cover and keep aside for 15 minutes.
To Make the Stuffing for Potli Samosa:
- Heat oil in a pan and add splutter cumin seeds.
- When the seeds crackle, add green chilies, ginger paste, and green peas, and sauté for 2-3 minutes.
- Add red chili powder, coriander powder, garam masala, turmeric powder, salt, dry mango powder(amchur powder), and mix well.
- Now, add boiled, cubed potatoes, and coriander leaves, and sauté for another 2-3 minutes.
- Cool completely, mash slightly, and divide the stuffing into equal portions and keep aside.
To Stuff and Seal Samosas:
- Divide the dough into equal portions and roll out each portion into 4-5 ½ inch diameter circles.
- Place 1-2 tbsp of potato stuffing in the center.
- Apply some water at the edges and bring the edges together till they are shaped like a potli bag(as shown in the video).
- Roll the dough and cut it into thin strips of 5 to 6 mm width.
- Take one strip, brush it with water, and carefully tie around the neck of the potli and gently press to secure the potlis.
- Repeat the same procedure to make the remaining potli samosas.
To Fry Potali Samosas in Air Fryer:
- Preheat air fryer at 370°F for 5 minutes and line a pan with aluminum foil.
- Place prepared potali samosas into the oil greased pan and give it a milk wash(you can use eggs instead of milk).
- Air fry potli samosas for 15 Minutes or until it becomes golden brown color (flip them after 7-8 minutes and cook until golden brown).
- Crispy and tasty potli samosas are ready to serve, serve with samosa chutney, or tamarind-date chutney. Enjoy!!!

Serve piping hot samosas with any tangy and sweet Indian dip or chutney like
and relish eating with piping hot tea.
If you want to fry the samosas, here are the Instructions to fry them:
To fry the Potli Samosa:
- Heat oil in a pan or kadhai oil should be warm.
- Gently, slide in the potlis(edges or potli side down) and fry them until brown and crisp.
- Maintain low heat throughout while frying the potlis.
- Once potli samosa is brown and crisp, take them out onto a paper towel.
- Potli samosa is ready to be served. Enjoy!!!
Tips To Make Potli Samosa:
- You can use whole wheat flour instead of Apf, but the result would not be as pleasurable as Apf.
- You can stuff your favorite stuffing and make a paneer potli or chicken keema samosa.
- To Make vegan, you can replace butter/ghee with oil and milk powder with baking powder.
- You Can bake potli samosas in the oven at 375°F for 20 to 22 minutes.

- The calorie count is based on a 2000 calorie diet.
- Per serving contains 72 calories, 12 g carbohydrates, 1.2 g dietary fiber, 1.6 g, and 1.8 g protein.
- Portion size can always be increased or decreased depending on your health goals and activity level.
