How to Make Vegan Avocado Egg Rolls in Air Fryer Appetizers
Hello Foodies, 
          Two weeks to go to start the holidays, yay!!! Are you ready for holiday parties, the family gets together, and fun? There is a lot of fun with family and friends together. So for the festive treat and as a side/appetizer, I decided to make these cheesecake factory-style Avocado Egg Rolls. 

Stuff these Avocado Rolls ahead and fridge them. Whenever need thaw them into the preheated air fryer, or you can deep fry them. These are one of my family's all-time favorite appetizers. Avocados are the best fruit, and these vegan Avocado Egg Rolls are the super hearty and satisfying appetizer.

I love this deliciously creamy and buttery avocados because they are healthy, nutritious, and versatile. These are loaded with good fats (monounsaturated fats)and are cholesterol and sodium-free. You can add them to just about any dish. The filling for these rolls made with Avocado, jalapeño, tomatoes, red onions, salt, and lemon juice and sprinkled some chili flakes. Placed the mixture over the egg roll wrappers, rolled them, and pressed to seal. Lastly, air fried them, and the results are crispy, crunchy, and tasty Vegan Avocado Rolls are ready to serve. We enjoyed them with Caliente Hot Salsa from the Bien Chido's Mexican Restaurant.

Preparation Time: 10 Minutes; Cooking Time: 7 Minutes. 
Each Vegan Avocado Egg Roll Contains 77 Calories. 

Ingredients:
  • Avocados 2, peeled and pitted
  • Egg roll/ Wonton / Spring Roll Wrappers 10
  • Jalapeño 1, finely chopped 
  • Tomato ¼ Cup, finely chopped
  • Red Onion ¼ Cup, finely chopped 
  • Coriander leaves / Cilantro 2 Tbsp, finely chopped
  • Lemon juice 1 tbsp 
  • Salt ½ Tsp 
  • Oil 1 Tsp 
  • Water to seal the edges
  • Caliente Hot Salsa for serving 

Instructions:
To Prepare Avocado Stuffing:
  • Place avocados in a bowl and mash them. 
  • Now add jalapeño, tomatoes, red onion, cilantro, lemon juice, and salt and mix all well and keep aside.

To Prepare Avocado Rolls:
  • Place an egg roll/wonton/spring roll wrapper on the floor/work surface. 
  • Spread 2 Tbsp of avocado stuffing /filling. 
  • Fold short sides over filling and fold up bottom corner over stuffing. 
  • Moisten the edges with the water, roll up avocado egg roll, pressing to seal. 
  • Place in an airtight container and refrigerate until ready to cook. 
  • Preheat an Airfryer at 390°F. 
  • Spray/Brush Avocado Rolls with the cooking oil. 
  • Air fry Avocado Rolls in batches for 6-7 minutes, turning once, until golden brown and crispy. 
  • Cut Avocado rolls in half diagonally, serve with salsa/sauce. Enjoy!!!

  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 77 calories, along with 10.17 g carbohydrates, 1.2 g dietary fiber, 3.15 g fats, and 1.42 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
