How to Make INSTANT POT ETHIOPIAN CHICKEN STEW

          Doro wot/wat is made with chicken drumsticks or wings, that are cooked in the berbere spice mix and served with the hard-boiled eggs. It proves a delicious accompaniment. One of the great Ethiopian foods is Doro wat or chicken stew.


Using the aromatic mixture of berbere spices, a heavy load of ghee / Ethiopian butter, chicken drumsticks, hard-boiled eggs, and onions, Doro wat is made in the instant pot. The sauce is mostly made from onions that have been stewed down for so long.

The chicken comes dripping with juices and the egg is immersed in flavor. Making Doro wat in the instant pot is super easy and quick. You won’t believe how much flavor you can get from a dish in such a short amount of time! Traditionally, Doro Wat serves over steamed rice or with Injera(Ethiopian Flatbread), which is made from tef. Tef is the world's smallest grain super grain. 

Prep Time: 15 Minutes Cook Time: 15 Minutes 
Each Serving of Doro Wat Contains 372 Calories.

INGREDIENTS:
  • 4 Chicken Drumsticks (you can use thighs if you prefer)
  • 1 ½ Tbsp Berbere spice, divided
  • 1 ½ Tsp Salt
  • 2 Tbsp Ghee (you can use butter or avocado oil) 
  • 1 Onion, large, finely chopped
  • 1 Tbsp Ginger-garlic paste
  • 2 Tbsp Tomato Paste
  • 2 Cups Water
  • 2 Hard-boiled eggs, halved
  • 1 Tbsp Lime Juice

INSTRUCTIONS:
To Marinate Chicken:
  • Wash and pat dry chicken drumsticks.
  • In a plate place chicken drumsticks and sprinkle ½ Tsp salt thoroughly.
  • Now, sprinkle ½ Tbsp Berbere spice mix and coat evenly.
  • Once done, set aside.

To Prepare Doro Wat in the Instant Pot:
  • Turn on the saute mode of the instant pot.
  • Once hot, add ghee, onion, and ginger-garlic paste. 
  • Sauté and cook covered for 6-8 minutes, stirring occasionally, or until onions become golden brown and softened.
  • Add Berbere spice mix and mix well.
  • Add water 1 cup and give it a quick stir.
  • Add berbere spice seasoned chicken drumsticks, tomato paste.
  • Close the lid of the instant pot and place the vent on the sealing position.
  • Cook on Manual Mode(Hi) for 8 minutes.
  • Natural Pressure Release for 10 minutes and then release the remaining pressure manually.
  • Open the lid, add hard-boiled eggs, and stir all well.
  • Stir in the lime juice and serve over rice or with a hard-boiled egg in each bowl.

  • Per serving contains 372 calories, 10.2 g carbohydrates, 3 g Dietary Fiber, 21 g fats, and 32 g protein.
