Air Fryer Panipuri | Panipuri and Ragda in the Instant Pot

How to Make Panipuri in Air Fryer and Ragda in the Instant Pot 
Hello Foodies, 
         Yay! Made one more most popular and healthier Indian street snack using 2 of my favorite kitchen gadgets. One is an Instant Pot, and the second is Air Fryer. This Panipuri is the famous Mumbai street food where puris are filled with dried white peas gravy, sweet, tangy and spicy chutneys, onion, and sev. 


Now, making pani puri at home is super easy and quick too. Yes, made tangy, sweet, spicy, and flavorsome golgappa or panipuri using air fryer and instant pot. Yes, you can fry pooris in the air fryer. Frying puri in an air fryer is the healthy and best snack to serve to family and friends. In this plate, puris are filled with white peas and potato Ragda, three spicy, tangy and sweet chutneys, finely chopped onion, coriander, fine sev, and khara boondi. 


           Homemade pani puri is the best snack to make in a healthy way with customized flavors prepared as per our requirement. Any kind of filling can be added to the puri. The spiciness can be adjusted according to your taste.

           I have a Gowise Air Fryer, and I was amazed to see that the puris puffed up as we would fry them. I have used ready to fry pooris. Spray some oil and place these dried and ready to fry pooris in the preheated air fryer and fry for 2 minutes. In 2 minutes, crispy puri will be ready to serve. You can make all the puris in well advance. You can also deep fry the puris in oil for crispy puris and store in an airtight container. I like to make pani puri these days in my GoWise Air Fryer and many other fried recipes without or with very little oil, especially after office quick snacks for my husband.


Here are some of my favorite Air Fryer Snacks Recipes:

Instant Pot Ragda for Pani Puri:
            As I mentioned many of my instant pot recipes, I use my instant pot pretty much every day to make an everyday meal. So making this ragda for pani puri in the Instant Pot is much easy. I have made this simple, non-spicy, three ingredients ragda in instant pot. And in less than 10 minutes. This Ragda has a combination of tangy, sweet, and less spicy flavors. After having one plate, I am sure you will ask for more and more. In this recipe, ragda is made by using dried white peas(white vatana). Soaked peas in the water for 7-8 hours. Then soaked peas cooked in instant pot manual mode for 8 minutes with salt, turmeric, and water. Cooked till gets thick, flowing consistency. Ragda should have thick gravy from some mushy peas and potatoes. So here cooked potatoes in the Instant Pot and mashed them with peas and chat masala(if you like add 1 tsp red chili powder). So here, Ragda is mild in taste, but have the flavor of chat masala. If Ragda is made ahead of time, then warm it up again before serving.

To Fry Puris in an Air Fryer:
Ingredients:
  • Ready to fry puris
  • Oil spray 

Instructions:
  • Preheat Air Fryer at 350 F for 3 minutes. 
  • Spray some oil over the dried puris. 
  • Arrange oil greased puris in the air fryer basket. 
  • Close the basket and air fry the puris @350 F for 2 minutes(you can hear the sounds of frying puris). 
  • Once done, open the basket and fully puffed up puris are ready to munch on. 
  • If air frying ahead of time, fry them and place in an airtight container. 

To Make the spicy, tangy and sweet pani(water):
Ingredients:
  • Ready to mix pani puri masala packet
  • Water 1 ½ Cup

Instructions:
  • In a bowl, add ready to mix pani puri masala and water and mix all well. 
  • Add chopped coriander leaves and khara boondi, and keep it aside. 

Ragda in the Instant Pot:
To Cook White Peas in the Instant Pot:
Ingredients:
  • Dried White Peas / White Vatana ½ Cup 
  • Turmeric ½ Tsp
  • Chat Masala 1 Tsp 
  • Salt 1 Tsp 
  • Water 3 Cups

Instructions:
  • Wash and soak the dried white peas Ina water for 7-8 hours. 
  • Turn on the Instant Pot and add soaked white peas, turmeric, salt, and water. 
  • Close the lid and place the vent on the sealing position. 
  • Cook on manual mode(Hi) for 8 minutes. 
  • NPR for 10 minutes and then release the remaining pressure manually. 
  • Open the lid and mix well. 
  • Perfect and mushy peas curry is ready, keep aside. 

To Cook Potatoes in the Instant Pot:
Ingredients:
  • Potatoes 3-4
  • Water as needed 
Instructions:
  • Turn on the Instant Pot and add 2 cups of water into the insert of the instant pot. 
  • Place a trivet with potatoes pan(I have made a slit in the potatoes, that help to cook potatoes well and in less time). 
  • Add water 1 Cup and close the lid of the instant pot. 
  • Place the vent on the sealing position. 
  • Cook on manual mode(Hi) for 3 minutes. 
  • NPR for 10 minutes and then release the remaining pressure manually. 
  • Open the lid and let the potatoes cool down. 
  • Once cool, peel the skin of the potatoes. 

To Make the Ragda:
  • In a bowl add potato, and mash it. 
  • Now, add white peas and chat masala and mix all well. 
  • Ragda is ready to, if needed, warm it up again before serving. 

To Assemble the Pani Puri:
  • Take the puri and poke a hole in it using your thumb or a spoon(refer video). 
  • Now, fill the puri with the onion, coriander leaves, ragda, sev, boondi, pani puri masala pani, mint chutney, and tamarind-dates chutney. 
  • Similarly,. Assemble 6-7 more puris and make a pani puri platter. 
  • Lastly, sprinkle some chat masala and pour some tangy and spicy water. 
  • Voila! Tempting pani puri or golgappas are ready to slurp. Enjoy!!! 


How to Eat Pani Puri:
  • Eat it immediately. 
  • Take it all in one bite. 
  • Don't let it get soggy, or the ball will break down. 
  • Repeat the same with the remaining puris.

To End Pani Puri Dish: 
  • Traditionally, a pani puri snack is ended with a sukha puri(my fav). 
  • To make a sukha, prepare the puri with a hole and stuff it with the chat masala and mashed peas. 
  • Now, instead of adding any pani, add more spices to it with a small squeeze of lime and garnish it with finely chopped coriander and sprinkles some sev. 
  • Eat it immediately, yum! 

My Take:
  • Here I have used white peas/vatana(just like traditionally used), but you can use green peas or chickpeas too; it will taste good with these both also. 
  • If you want ragda spicy, then add red chili powder 1 tbsp while cooking white peas in the Instant Pot.
