Instructions:
To marinate the chicken drumsticks:
- Open up the package of chicken drumsticks and remove the skin if present.

- In a bowl, add chicken drumsticks, garlic, coriander powder, cumin powder, garam masala, black pepper, nutmeg powder, red chili powder, salt, and lemon juice.

To Oven Roast the Chicken Drumsticks:
- Preheat oven at 400 F.
- Fill up the oven-safe tray with hot/boiling water.
- Now, place the marinated chicken on the rack(or you can use a vented oven-safe tray).
- Place the chicken rack on the water-filled bottom tray.
- Now bake chicken at 400 F for 25 minutes or until it's fully cooked.
- Then turn over and broil for 5 minutes to get an extra crunchy and crispy texture.
- Take out of the oven, and it's ready to serve. Enjoy!!!
My Take:
- If you don't have a vented tray or rack, then you can use a foil tray and make some slits with a knife and then place the chicken, so your vented tray is ready to use.
- For a change, you can add 2 Tsp Cajun seasoning and adjust the salt quantity accordingly.
- You can prepare the recipe with chicken thighs instead of drumsticks, or use a combination.
- With the chicken drumstick, you can also add potato slices, green peppers, and onions.
- While the chicken drumsticks bake, you can make whatever sides you like.
