Here is an exciting spin to regular stir fry. Cook this ivy gourd with some Indian spices and chickpeas flour, and you will have a crispy and crunchy dish ready to serve. Tindora fry is one of the easiest, healthiest, and tastiest stir fry recipe I often prepare to go in the tiffin box and even for weeknight dinner. This is one of the crunchy and spicy dishes which we like to eat with chapati(roti)or with dal-chawal. Ivy gourd is low in calories and hence can be consumed by those trying to lose weight. Ivy gourd is also known as Tindora, Tendli, Tondali, dondakaya, kovakka, kundru across most Indian households. There are many variations to this dish across various states in India, depending on the individual taste. Here I have presented no onion no garlic version of this ivy gourd stir fry.

Deliciously crispy, seasoned air fryer Bhindi/Okra Fry is my favorite dish nowadays. This bhindi fry is one of healthy, crispy must try Okra Fry air fryer recipe. Fried foods are full of saturated fats, and they will not help you in your fitness goals. So using the air fryer for cooking dishes helps to cut down the calories by 70-80%. I love fried food but don't like the greasy smell it leaves in the kitchen, and also, it's not the healthiest option to snack on. An air fryer is like a great way to Fry foods without all the downsides of deep-frying. It's been just 6-8 weeks, and I am ridiculously loving this my new kitchen gadgets GoWISE Air Fryer. Just about everything that I have tried to cook in it has turned out pretty good.

This simple, seasonal green veggie has an essential role in Maharashtrian cuisine and festival. This ghewdyachi bhaji is easy to prepare. A bowl is full of nutrition and delicious veg recipe, which is perfect for lunch, dinner, or an ideal for tiffin box dish. This taste heavenly with bajra bhakri also goes very well with chapati or with phulkas. I have tempered this ghevda bhaji with cumin and mustard seeds, curry leaves, and flavored with some spices.
These common Beans are naturally low in fat, calories, and cholesterol. It is a good source of dietary fiber, protein, phosphorus, copper and manganese and an excellent source of folate.

Kantola / spiny gourd is a seasonal vegetable and found especially during the rainy season. It is slightly similar or a smaller version of bitter gourd. McDreamy likes to taste different vegetables, and because of him, I ate different veggies after moving to the USA. I tried those veggies, which I never tried back home. The spiny gourd is more like a veggie-rich in water content like cucumber and radish. So I made this simple Kantola stir fry or curry to pair with chapati or as a side dish for rice for lunch and dinner.

Crispy, simple, and non-fried Bitter gourd recipe that can simply go well with the chapati(roti), brown or white rice, Millets, or even taste best if eaten as it is. This karela fry is a super healthy and diabetic friendly recipe; there is no usage of any sugar, jaggery, yogurt, or tamarind as well. Probably it's the way the bitter gourd fry is prepared that lends that unique taste. Though Bitter Gourd is not all of our favorite veggies, try this way recipe, and it will bring a unique flavor to the table. Serve it with hot chapati, and you will prepare it again and again.

This roasted, oil-free, vegan, and vegetarian eggplant recipe is my absolute favorite dish to eat with Masala bhakri. This is a low carb, gluten-free, oil/butter free and more nutritious vegetarian entry, and it can be your weekly meal plan menu. Roasting eggplant brings out a whole new dimension to this versatile kitchen staple. I have tried roasting eggplant (baingan bharta / vangyache bharit) on a grill, stovetop, or in the oven.
