Quick and Easy: Ghevdyachi bhaji /Common Beans stir fry

      This simple, seasonal green veggie has an important role in Maharashtrian cuisine and
festival. This is easy to prepare. A bowl is full of nutrition and delicious veg recipe, which is perfect for lunch, dinner or an ideal for tiffin box dish. This taste heavenly with bajra bhakri also goes very well with chapati or with phulkas. I have tempered this ghevda bhaji with cumin and mustard seeds, curry leaves and flavored with some spices.
These common Beans are naturally low in fat, calories, and cholesterol. It is a good source of dietary fiber, protein, phosphorus, copper and manganese and an excellent source of folate.
        Nothing can be satisfying than this simple meal in this cold weather. Try this quick and easy Maharashtrian style ghevdyachi bhaji.


Preparation Time: 10 Minutes; Cooking Time: 20 Minutes.

Ingredients :

  • Ghevdyachya shenga / Common Beans 250 g
  • Onion 2, chopped
  • Red chili powder 1 tbsp
  • Salt 1 Tsp
  • Turmeric powder 1 Tsp
  • Mustard Seeds 1 tsp
  • Cumin seeds 1 tsp
  • Curry leaves
  • Coriander leaves ¼ cup, chopped
  • Veg. Oil 2 Tsp

Instructions:

  • Trim off the tips on each end and cut or pluck beans into roughly 1-inch length and wash them.
  • In a pan/steamer add 1 cup of water and steam plucked beans for 10 minutes.
  • Heat oil in a kadhai and splutter cumin and mustard seeds, curry leaves.
  • Add chopped onion, asafoetida and saute and cook for 2 to 3 minutes.
  • Now, add red chili powder, turmeric powder, salt and half
    of the coriander leaves and mix all well. 
  • To the spices add steamed ghevda beans and saute and let them blend with the spices.
  • Mix and cook for 2-3 minutes, till the beans blend well with spices.
  • Garnish with the remaining coriander leaves.
  • Tadaa, healthy and tasty ghevdyachi bhaji is ready to serve, serve hot with chapati, bajra bhakri or with phulkas. Enjoy!!!
