How to Make Maharashtrian Style Puranpoli

Celebrate this Akshaya Tritiya by preparing this mouth-watering and traditional Indian dessert, Puranpoli is an Indian sweet flatbread made with whole wheat flour, split Bengal gram, jaggery, and some Indian aromatic spices and served with luscious aamras (mango juice/dessert). Puran Poli is one of the top Indian sweet flatbread recipes and which prepared during Akshay Tritiya, Dasara, Diwali, Ganesh Chaturthi, Holi, or any other Indian festival occasions. This time I have prepared this Indian flatbread instant pot style. And fellas trust me, it's super quick, hassle-free, and effortless to make. Puran poli is a traditional sweet flatbread made on festive or auspicious occasions as a prasadam or naivedya. Puran poli is traditionally prepared using wheat flour dough and is stuffed with a delicious, sweet, and aromatic Puran stuffing in the middle. Flattens the stuffed dough ball and oil or ghee roast on tawa or pan. Puran is made with a mixture of boiled, mashed split Bengal gram(chana dal) cooked with jaggery, cardamom, and nutmeg powder. All this makes this dessert or sweet melt-in-mouth delicacy. Also on this day most households prepare traditional Indian sweets, Puran poli, and Aamras and offer these to Lord Vishnu and then are distributed as prasadam among family and friends.
About Akshay Tritiya:
Akshay Tritiya is a traditional festival, and it considers the most important and lucky day for the Hindu community in India. It is considered the most golden day of the year. Because Akshay means ‘immortal’ and Tritiya means 'third lunar day.’ So anything that we do on Akshaya Tritiya grows with time and cannot be destroyed. So is considered as an auspicious day to invest or start a new venture or buy gold. Any initiative made on that day or anything purchased on that day is considered to be good fortune. Akshaya Tritiya is also known as Akha Teej, and it falls on the third lunar day of Shukla Paksha of Vaishakha month, and this year it is falling on the 7th of May.
If you plan to prepare a sweet treat at home, we recommend you keep this classic instant pot dessert recipe handy. Did I mention Aamras here? Oh yeah! Aamras is my absolute favorite dessert ever! Aamras, Aam means mango, and ras means juice, so basically, Aamras means mango juice or pulp which is flavored with saffron, cardamom as your liking. So preparing aamras at home is always the best and easiest or last-minute dessert idea. You just need to put all ingredients into the grinder and grind to make smooth puree and Viola! Creamy and yummy Aamras is ready. Chill before serving and serve chilled with Puran Poli, Poori, chapati or enjoy as it is. There are different flavored Aamras in every region in India. You can add cardamom powder, saffron, or ginger powder to flavor Aamras. So what are we waiting for, let's get started!
To Prepare Puran Poli Instant Pot Style:
Each Puran Poli Contains 222.6 kcal.
Ingredients :
To Make Dough :
- Wheat Flour 1 ½ cup
- Salt ½ tsp
- Turmeric powder ½ tsp
- Veg. oil 1 Tbsp
- Water as required to knead the dough
To Make Puran / Stuffing:
- Split Bengal gram (chana dal) 1 cup
- Jaggery (गुळ) grated 1 cup
- Turmeric powder ½ Tsp
- Cardamom powder 1 Tsp
- Nutmeg powder ¼ Tsp
- Veg. oil 2 Tsp
- Water 3 cups
Instructions:
To Make Dough:
- In a mixing bowl add wheat flour, salt, turmeric powder, and oil and knead to make a soft dough using enough water.
- Drizzle some oil over dough, cover, and keep aside.
To Make Puran / Stuffing for Puranpoli:
- Add washed chana dal into the pan and add 2 cups of water.
- Add oil 1 Tsp, turmeric powder, and mix well.
- Turn on instant pot and add 1 cup of water and place chana dal pan.
- Close the lid and place the vent on the sealing position and cook on manual mode(Hi) for 10 minutes.
- NPR for 5 minutes and then release the remaining pressure manually.
- Drain out the water from cooked chana dal and use drained water to make katachi amti as a broth to make stews.
- Now, turn on Saute mode of the Instant Pot and heat oil.
- Add boiled chana dal and jaggery and mix well.
- Saute and Cook for 8-10 minutes or until the mixture thickens.
- Now, add cardamom and nutmeg powder and mix well.
- Now, turn off the Instant pot and cool the mixture slightly.
- Mash the mixture or grind to make a fine consistency and keep aside.
To Prepare Puran Poli:
- Divide dough into equal portions and take one dough ball, roll out one portion of the dough into a 4 to 5 diameter circle using a little whole wheat flour for rolling or you can roll dough by using fingers as shown in the video.
- Place a portion of the filling in the center and fold the edges of the dough over the filling.
- Pinch the edges together to seal the filling.
- Flatten the dough and roll again to make Puran Poli, using a little whole wheat flour for rolling.
- Cook on a hot tava/skillet over a medium flame, till it turns golden brown in color from both sides by smearing oil.
- Repeat with the remaining dough and make more Puran polis.
- Here, delicious, aromatic, and authentic Puran Poli is ready to serve. Serve hot with Aamras(Mango Juice) Enjoy!!!
My Take:
- You can also use split pigeon peas lentils(turdal) to prepare Puran or stuffing.
- Jaggery can be replaced by using brown sugar or refined sugar as well.
- Instead of wheat flour, you can use all-purpose flour/maida or half wheat flour and a half all-purpose flour can be used to prepare the poli.
- While rolling the poli, be careful, if you are making the first time you can use rice flour or maida to roll Puran Poli.
- If Dough formed is hard then keep it covered for an hour or two.
- If the chana dal and jaggery or sugar mixture isn't uniform, first grind it to make a smooth stuffing and then dry it in a pan.
- When rolling the poli, do it with a light hand such that it moves with ease.

To Prepare Aamras(Vegan Mango Dessert):
Ingredients:
- Mango pulp 250 g
- Sugar 2 Tbsp
- Saffron few stands + 2 Tbsp warm water
Instructions:
- Rinse the mangoes and slice off the upper end.
- Slice a piece of mango and then cut it into small pieces and remove the pulp.
- Add mango pulp, saffron+water, and sugar blend it till get a smooth puree, and Amaras is ready to serve.
- Chill prepared Aamras for 1-2 hours into the fridge and serve chilled with Puran poli or puri. Enjoy!!!
