Raw Mango Panna in Instant Pot / कैरीचे पन्हे

Hello Mango Lovers,
            Flavorsome, refreshing and hydrating summer drink, raw green mango panna prepared in Instant Pot. Tangy, slightly spicy, with hints of black pepper and roasted cumin powder, this raw mango juice can be a new addition to your holiday gathering. Have you prepared any drink using instant pot? There are endless possibilities for Ip beverages, and this mango panna is one of them. I love to find new ways to use my Instant pot for meal prep and now let's take a look at this summer cooling drink. 


           Best things about this raw mango concentrate are that I have not added white sugar here and it can be stored for months and devoured a glass of chilled panna throughout the summer or whenever you feel like it. I love ripe mangoes a lot, and I can eat them for any meal of the day. Also, I do love raw mangoes too! Especially when it comes to Instant raw mango pickle and raw mango panna (kairiche panhe/aam panna). I already have posted a recipe of instant mango pickle and today sharing this popular Indian summer drink, Raw Mango Panna! It's really a body cooling, thirst quenching, and absolute delightful summer drink. In India, during summer at every corner, you will see a cart loaded with raw mangoes and people indulging in this tangy, refreshing, thirst quenching raw mango panna.


Why I have used Instant Pot
        The raw green mangoes are the reason this recipe calls for an instant pot. Raw mangoes are hard and cooking or steaming them in an instant pot is a quick way to cook them. You will need 5 minutes to cook raw mangoes in instant pot, but stovetop method takes 20-25 minutes to cook raw mangoes, and yes I know it's a long time. So instant pots are bringing more healthy, more delicious and as its name suggests instant meals and drinks to the table.

          This is one my white sugar-free hydrating drink recipe. With the addition of jaggery, salt, and spices, someone can be assured of getting electrolytes from this delicious drink during the scorching heat of summer. Raw mangoes are the richest source of vitamin C. It can protect from intense heat and dehydration and provides energy. 

Do this if Making for Kids
         If you are not used to these kinds of spices or if you are preparing it for kids then I suggest you prepare raw mango, jaggery and salt concentrate only and add spices whoever likes it while making a drink or add spices to individual glasses to taste.

Preparation Time: 15 Minutes; Cooking Time: 5 Minutes.
Each Serving of Raw Mango Panna Concentrate Contains 40 Calories.


Ingredients:
To Prepare Raw Mango Panna Concentrate:
  • Raw Green Mangoes 3
  • Jaggery 1 Cup(more or less according to the sourness of raw mangoes)
  • Black Salt / Rock Salt 1 Tsp
  • Roasted Cumin Powder 1 Tsp
  • Black Pepper Powder 1 Tsp
To Serve Raw Mango Panna:
  • Lemon slices
  • Red chili powder
  • Ice cubes
  • Raw Mango Panna Concentrate
  • Water as needed
  • Mint Leaves



Instructions:
To Prepare Raw Mango Panna Concentrate in IP:
  • In a pan place raw mangoes and turn on the instant pot.
  • Add 1 ½ Cup of water into the Instant Pot insert and place pan.
  • Close the lid and place the vent on sealing position and cook on manual mode(Hi) for 5 minutes.
  • NPR for 5 minutes and then release the remaining pressure manually and open the lid.
  • Let them cool completely and then peel the cooked raw mangoes and remove the pulp.
  • Now, in a bowl add raw mango pulp and add jaggery and mix well.
  • Blend the raw mango and jaggery mixture into smooth paste and strain to get a lump-free paste.
  • Add salt, cumin powder, and black pepper and mix well.
  • Here, thick, tangy and flavourful raw mango panna concentrate is already!







To Serve Raw Mango Panna Drink:
  • Apply lemon juice and dip glass into red chili powder.
  • Now, add ice cubes, 2-3 Tbsp of raw mango panna concentrate and chilled water.
  • Garnish with a lemon slice and mint leaves.
  • Voila, tangy, Indian summer delight is ready to serve. Enjoy!!!


Different Ways to use mango concentrate apart from making raw mango panna:
  • Use this raw mango concentrate and make some tequila shots.
  • Use this raw mango concentrate in your favorite cocktails or mocktails preparations.
  • You can also use this raw mango concentrate to make a virgin mojito, I tried for our weekend party and it rocks. 
  • You can make Mango Panna lemonade (Indian version of lemonade).

How to Store Raw Mango Panna Concentrate:
Store this pulp or concentrate in a dry, airtight container.

Shelf Life of Mango Panna Concentrate:
  • It will remain good at room temperature for up to 1 month.
  • It will remain good for 2 months if refrigerated.
  • It will remain good for up to 6 months if kept in the freezer(just transfer the concentrate into the silicone molds and let it freeze for an hour. Once they are hard, pop those cubes into a ziplock bag and pop it in the freezer).
My Take:
  • Raw mango should not be soft.
  • Do not eat raw mango without draining its milk or sap, the intake of sap will cause throat, mouth or gastrointestinal infection.
  • Add jaggery according to the sourness of the raw Mango.


To Make Raw Mango Panna in Pressure Cooker:
  • Add 1 ½ cup of water into the cooker and place a trivet.
  • Wash raw mangoes and dry them and place them into cooker pan.
  • Transfer cooker pan with trivet and close the lid and cook on medium heat until 2 whistles.
  • Let them cool completely and then peel the cooked raw mangoes and squeeze out the pulp.
  • Now, in a bowl add raw mango pulp and add jaggery and mix well.
  • Blend the raw mango and jaggery mixture into smooth paste and strain to get a lump-free paste.
  • Add salt, cumin powder, and black pepper and mix well and pulp is ready to make kairiche panhe. Enjoy!!!

Dietary Comment :
The calorie count is based on a 2000 calorie diet.
It makes about 500 ml of raw mango concentrate.
Per serving(25ml of raw mango concentrate) contains  40 calories, along with 7.28 g carbohydrates,  1.13 g dietary fiber,  0.12g fats, and  0.33 g protein.

  • Raw mangoes are good for gums, it prevents bad odor, gum bleeding, and tooth decay.
