            Mangolicious Jam! Sharing with you delicious fruit spread, raw mango jam/gulamba recipe, which will last for a year. Many varieties of fruit preserves are made globally. This raw mango spread is one of them. You must try this easy raw Mango Jam recipe made without pectin. No sugar in this recipe is wonderful! It tastes incredible, balanced, and perfectly tangy and sweet. Traditionally we use Mango and Jaggery in equal ratio, but I have cut down the jaggery by ½ because I used mangoes here were sweet. If you are using sour Mangoes, then take Jaggery and Mango in equal ratios. Full of fruity flavor, this delightful jam is excellent for chapati roll(roti). This recipe reminds me of the flavor I loved as a child.
            The delicious gulamba tastes great with chapati, bread, or ice cream. This jam happens to be a favorite food of mine, and summer doesn't feel complete without raw mango Panna and a batch of my mom-style raw mango jam. Given ingredients makes about 700 g of jam. I made this jam with fresh raw green mangoes that I have got from my friend's home garden.  This unique sweet and tangy jam makes a perfect gift too. The spices add wonderful flavor. This jam has a flavor that compliments anything it's served with. Let's get started!

How to make Raw Mango Jam
To make this really simple homemade raw Mango Jam, you need two main ingredients and some spices to flavor it. Peel, grate the mangoes, and cook with the jaggery until it thickens and needs some time to cook. In a few minutes, you will have created a sweet and luscious raw mango jam. For making this jam, I reduced the amount of Jaggery since the mangoes were so sweet. If you can't find jaggery, you can use sugar instead of jaggery. Also, I have added some spices to flavor it. 


Preparation Time: 15 Minutes; Cooking Time: 15 Minutes.
Each Serving of Raw Mango Jam (Gulamba) Contains 54 Calories.


Ingredients:
  • Raw Green Mango /(कैरी) 3
  • Jaggery(गुळ) 350 g
  • Cardamom Powder(वेलची) ½ Tsp
  • Cinnamon powder(दालचिनी) ¼ Tsp
  • Salt(मीठ) 1 pinch
  • Saffron(केसर) few strands
  • Cloves (लवंग) 3

Instructions:
  • Wash, peel the skin of raw mangoes, and grate it.
  • Dry roast grated raw mangoes on medium to low flame for 2-3 minutes.  
  • Now, add jaggery and mix well and cook on medium to low flame.
  • Jaggery will start melting and keep stirring in between till jaggery dissolves.
  • As the mango pieces start cooking in the jaggery liquid, their color will change.
  • Continue cooking until the mixture thickens.
  • Add cardamom powder, saffron strands, cinnamon powder, cloves, and a pinch of salt and mix well.
  • Cook till it reaches one string consistency. (Remember, this mixture will thicken as it cools. So do not cook it till it is too thick). Let it be at pouring consistency.
  • Once cool down, Raw Mango Jam is ready to serve. Enjoy!!!

Simple ideas to serve Raw Mango Jam / Gulamba with:
  • You can use gulamba as a sandwich spread. 
  • On top of pancakes or waffles with whipped cream
  • Over plain yogurt
  • Top over the Ice Cream.
  • You can serve this raw Mango Jam with Indian flatbreads such as Chapati, Poori, Phulka, Paratha.
  • Also, you can serve this jam with dosa, Uthappa, or buns.
  • A filler for cupcakes and muffins.

Tips:
  • You can use 2 Tbsp of lemon juice and ¾ of lemon zest for it to thicken and makes it a little fruitier. 
  • Lemon juice also helps the jam set up and will also help prevent the growth of bacteria.
  • If your mangoes are too sour, you will need to add more jaggery.
  • You can keep it in the fridge and use it as long as it lasts.
  • When cooked properly, gulamba does not need refrigeration.
  • Also, try to choose mangoes that are a little sour and use more or less jaggery according to the sourness of mangoes.

  • The calorie count is based on a 2000 calorie diet.
  • It takes about 700 g of Raw Mango Jam.
  • Per serving(25 g of raw mango Jam) contains 55 calories, along with 13.3 g carbohydrates, and  0.22 g protein.
  • Per serving(100 g of Raw Mango Jam) contains 220 calories, along with 54 g carbohydrates, 1.5 g dietary fibers, 0.31 g fats, and 1 g protein.
