Spinach-Garlic Stir Fry

Hello Foodies,
       Here is an interesting spin to regular dal-spinach or palak paneer. Or tired of eating same curries with spinach, here is smokey spinach-garlic stir fry. Simply cook this spinach leaves with garlic, chilies and split moong dal and you will have a tasty and crunchy dish ready to serve. This is one of the easiest, healthiest and tastiest stir fry recipe I often prepare to go in the tiffin box and even for weeknight dinner. We like to eat this spinach-garlic stir fry with ragi bhakri(finger millets flatbread) or with chapati. Spinach is low in calories and hence can be consumed by those trying to lose weight. This vegan recipe of spinach-garlic stir fry is dedicated to all vegans and Vegetarians who love to indulge in this delicious spinach. Everybody will love it, even those who hate veggies, especially when you use crushed garlic with chopped spinach. I have used just 2 Tsp oil, and I prefer this less oil lighter version. It's healthier and tastes amazing too. 

             You only need seven ingredients to make spinach with garlic, oil, salt, onion, green chilies, and moong dal(optional). Soak the split moong dal in water for half an hour. The longer you let it soak before cooking, the quicker they will cook. Fresh spinach is the best choice. Canned or frozen spinach is good too. The result is a lower calorie dish with a lot of flavors. The dish is ready in 15 Minutes and is super easy to make. I make it almost every week; it's one of my all-time favorite spinach, and I like to eat it with bhakri. Spinach is a powerhouse of nutrients! It contains vitamins K, A, C, Vit.B group, iron, calcium, and more. Vitamin C present in spinach is a powerful antioxidant that promotes skin health and immune function. Garlic is low in calories and rich in vitamin C, vitamin B6, and manganese. Also, it complements most savory dishes, particularly soups and sauces. The strong taste of garlic can also add a punch to otherwise bland recipes. So guys give this smoky Spinach-Garlic Stir Fry a try.

Preparation and Cooking Time: 15 Minutes
Each Serving of Spinach-Garlic Stir Fry Contains 120 Calories.


Ingredients:

  • Spinach 1 Bunch
  • Onion 1 small, chopped
  • Garlic 6 cloves, crushed
  • Green chilies 5 strips, finely chopped
  • Moong dal 1 Tbsp, soaked in water for 30 minutes
  • Salt 1 Tsp
  • Veg. Oil 2 Tsp






Instructions:

  • Wash and chop spinach leaves and keep aside.
  • Heat oil in a pan and add garlic, saute and cook for a minute.
  • Now add onion and saute and cook for 2-3 minutes or until it becomes translucent.
  • Add chopped spinach leaves and mix well.
  • Add salt and soaked moong dal and mix all well.
  • Cover and cook for 4-5 Minutes and stir in between.
  • Saute and cook until all the water gets evaporated. 
  • Tasty and healthy spinach-garlic stir fry is ready to serve. 
  • Serve hot with bhakri, chapati, or with roti. Enjoy!!!
