Air Fryer Indian Masala Corn and Elote
Hello Foodies,
         We’ve been enjoying this warm weather of summer in Florida! And I’ve been using my GoWise air fryer to help prepare side dishes. This Air Fryer Indian Masala Corn and Mexican Elote is the perfect side to burgers, chicken, and more! In the summer, we love to eat corn on the cob as our main dish too. It’s one of my favorite summer foods! 
 
           Cooking corn in the air fryer is easy, quick, and tastes so delicious! If you don’t want to heat the grill for just 2-3 corns, air fryer is the best way to go without heating an oven or grill! The roasted and crispy flavors for sweet corn are so great. Do try it!

Preparation and Cooking Time: 15 Minutes.
Ingredients:
To Make Indian Street Style Masala Corn(Bhuta):
  • Corn on the Cob 2
  • Butter 2-3 Tbsp
  • Red Chili Powder 2 Tbsp(I have used mild red chili powder)
  • Salt to taste
  • Lime wedges for serving
To Make Mexican Corn(Elote):
  • Corn on the Cob 2
  • Butter 2-3 Tbsp
  • Cotija Cheese ¼ Cup
  • Cajun Seasoning/ Chili pepper+cumin powder mixture 
  • Cilantro/Coriander leaves
  • Lime wedges for serving
Instructions:
To make the spice mix for Indian Masala Corn:
  • In a small bowl add in red chili powder and salt and mix well. 
  • Dip the lime/lemon in the spice mix to pick up the spices and rub all over the air fried corn, making sure to squeeze lemon juice while doing so.
To Make Indian Streetcorn(Indian Masala Corn)(Bhuta):
  • Preheat air fryer to 370º Fahrenheit for 3 minutes.
  • Spread butter on the corn/spray cooking spray.
  • Place corn on the cob in-basket of an air fryer.
  • Air fry at 370 F for 15 minutes, flipping corn halfway through cook time((Cooking time will depend on the size of corn, how full air fryer basket is, & different models/sizes of air fryers).
  • Once done, take corn out from the air fryer
  • While the Corn is still warm slather with butter.
  • Dip lemon slice into the red chili and salt mixture and rub the lime slice on the corn. Spicy and yummy Indian Masala Corn is ready to munch on. Enjoy!!!
Dietary Comment:
  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 234 calories, along with 36 g carbohydrates, 3.6 g dietary fiber, 10.6 g fats, and 5.5 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
To Make Mexican Corn(Elote)in an Air Fryer:
  • Preheat air fryer to 370º Fahrenheit for 3 minutes.
  • Spread butter on the corn/spray cooking spray.
  • Place corn on the cob in-basket of an air fryer.
  • Air fry at 370 F for 15 minutes, flipping corn halfway through cook time.
  • Once done, take corn out from the air fryer
  • While the Corn is still warm slather with butter (if you are using mayonnaise mix brush it after butter).
  • Squeeze lime juice over the Corn and shower with Cotija/Feta/Parmesan cheese. 
  • Season with Cajun Seasoning or chili and cumin powder mixture and cilantro.
  • Serve with extra lime wedges. Enjoy!!!
What is Cotija Cheese?
         Cotija cheese is a dry, salty cow’s milk cheese made in Mexico. Cotija is an enhancer. Take your dishes to the next level by crumbling or grating over Corn, tacos, or soups where you’d like to add a bit of saltiness and tang in flavor. Cotija does not melt. And to make Mexican Corn this Cotija cheese is perfect, but if you could not find you can use feta cheese, Parmesan or Pecorino Romano, these are works well, too. The secret of Mexican Corn is the cheese. It would be best if you found Cotija. It is the Mexican cheese, equivalent of grated parmesan, and you can find it in the refrigerated cheese section in some stores. 

What can I use instead of Cilantro/Coriander leaves?
          You can totally replace cilantro with basil, parsley, scallions, or chives would all be delicious instead.

What else I can use in the recipe:
           Mayo, yogurt, sour cream, or a combination of yogurt and sour cream would be delicious in this recipe. Just after greasing cooked Corn with butter, apply a layer of mayo, yogurt, sour cream, and then sprinkle seasoning and cheese.

 Tips:
  • If air-fried corns are not warm, then slather with butter, cheese, and seasoning and place it on the aluminum foil or parchment paper and broil for 3-4 minutes or until it becomes warm.
  • Also, if you want it browned like Indian street corn then set the timer for 20 minutes. After the first 10 minutes, turn the corn in the basket, so that it gets evenly cooked.
  • I have used fresh corn on the cob for this recipe. You can use frozen corn too, however, make sure that it is defrosted.
  • You can adjust the spice and salt levels as per your taste.
