How To Make Healthy Makhana Salad using an Air Fryer

           Healthy, Crispy, and Crunchy Salad made with Makhana/Lotus seeds. Keep these nutty, flavorful roasted Makhana ready in the snacks box for a healthy choice when you're peckish or fasting(Indian Traditional Fast). This easy, healthy Makhana Salad will help to power you through the day. It is a good diet-friendly snack. You can get creative with these roasted foxnuts as you desire. Snacks are a great time to add extra servings of nuts, vegetables, and fruits to your day. You can add your favorite veggies, and fruits to this salad. Pomegranate tastes awesome in this Makhana Salad. Snacking between meals can help with weight loss. Snacking on healthful options can help prevent someone from overeating as well as provide vitamins, fiber, and protein. Makhanas are delicious, economical, easy to prepare, and yet wholesome and healthy. Makhana by itself has no flavor or taste but can easily take up any flavor that it is cooked with.

         Makhana is certainly something that someone on a low-fat diet can include in their daily meals. Add the high-protein advantage of the tiny, healthy green peas and you've got yourself a winner of a dish that may further facilitate weight loss. This is an absolutely tasty, addictive, and healthy snack made with very little oil. Choose your seasoning and enjoy the crispy puffed Makhana. You can add your favorite spices to the roasted Makhana and it’s ready. I have added almonds, cashews, and peanuts. Feel free to skip if you want or add your favorite nuts/spices.

What is Makhana?

Makhana is also known as Phool Makhana, Lotus Seeds, Fox Nuts, Euryale Ferox and Gorgon Nuts. The seed itself has a very neutral taste and takes on the flavors that are added to it. Phool Makhana also finds significance in religious ceremonies in India and is a popular 'fasting' dish prepared during Navratri and other occasions.

Preparation Time: 5 Minutes; Cooking Time: 14 Minutes.

Each Serving of Makhana Salad Contains 162 Calories.


To Air Fry Nuts and Makhana:

  • Makhana/Foxnuts/Lotus Seeds 2 cups (50 g)
  • Almonds 3 Tbsp
  • Cashews 3 Tbsp
  • Peanuts 3 Tbsp
  • Red Chili Powder 2 Tsp
  • Salt 1 ½ Tsp
  • Oil 2 Tsp

To Make Makhana Salad:

  • Roasted Makhana and Nuts
  • Cucumber ½ cup, Chopped
  • Ghee/Oil 1 Tsp
  • Cumin Seeds ½ Tsp
  • Green Chilies 2, Chopped
  • Coriander leaves 2 Tbsp, Chopped

To Air Fry Makhana/Foxnuts/Lotus Seeds:

  • Preheat Air Fryer at 350 F(180 C) for 3 minutes.
  • Place the Makhana in a single layer inside a baking pan and sprinkle red chili powder 1 tsp, salt 1 Tsp, and oil 1 tsp and mix well.
  • Mix well and try to coat the Makhana with the red chili and salt.
  • Air Fry Makhana at 350 f for 8 minutes.
  • Stir the Makhana after 4-5 minutes.
  • Once done, move to a bowl to allow them to cool.
  • Let it cool completely before storing, and eating.

Stovetop Method to Roast Makhana: 
  • Dry roast makhana in a pan on very low heat.
  • Stir them occasionally. 
  • It takes around 15-20 minutes depending on the quantity of makhana. 
  • To check if makhana is roasted properly just take one makhana in hand and crush it, if it breaks nicely with the crunching sound, it means they are done.
To Air Fry Almonds, Cashews, and Peanuts:

  • Place the almonds, cashews in a baking pan and sprinkle red chili powder 1 Tsp, salt ½ Tsp, and oil 1 Tsp, and mix well.
  • Mix well and try to coat the nuts with the red chili and salt.
  • Air Fry nuts at 350 f for 6 minutes.
  • Stir the nuts after 3 minutes.
  • Once done, move to a bowl to allow them to cool.
  • Let it cool completely before storing, and eating.
To Make Makhana Salad:

  • In a bowl, add roasted Makhana and nuts, cucumber and mix well.
  • Splutter cumin seeds and roast green chilies in a hot ghee/oil 1 tsp.
  • Pour cumin seeds and chilies tadka over the Makhana and nuts mixture.
  • Add coriander leaves and mix well.
  • Healthy and delicious Makhana Salad is ready to serve. Enjoy!!!

Tips to Roast Makhana & Nuts in Air Fryer:

  • You can Air fry Nuts and Makhana at a time, add nuts after 2 minutes of air frying makhana.
  • They taste yummy without any seasoning too, but you can put some other seasoning if you like along with 1 Tsp oil and chili powder.
  • You must check and mix after 4-5 minutes. 
  • Watch and adjust the timing for your air fryer as needed.
  • Spice level can be modified to an individual’s choice. 
  • To make it spicier increased the quantity of red chili powder.

Storing Air Fryer Makhana:

  • Store roasted Makhana in an airtight container up to 2-3 weeks on the countertop/in the pantry.
  • If makhana became soggy or chewy then reheat/air fry for 5-6 minutes.
