How to Make Cheese-Corn-Avocado Sandwich and Toast
Hello Foodies,
         This recipe for quick and easy corn sandwich and toast is a simple and delicious breakfast sandwich recipe that you can whip up in no time at all with ingredients you probably always have on hand. This speedy breakfast toast or sandwich is great for anything from lunch boxes to evening snacks or light dinner. 
I have been making this sandwich for 2-3 years now and we love it a lot. With little alteration to the recipe, you can make your version as well. As I have used my Avocado-Cilantro Dressing as a sandwich spread, you can substitute it with green chutney or any of your favorite sandwiches spread. Also, the cheesy sandwiches are delicious enough to tempt the picky eater.

You can add other cooked vegetables like carrot, peas, beans. Cooked chicken chunks can also be added to the stuffing. Corn Cheese Toast would also make a satisfying snack, or you can use these as an appetizer by using brown bread baguette slices instead of regular white bread slices.

Ingredients:
To Steam Corn on the Cob in the Instant Pot:
  • Corn on the cob 4 Ears
  • ½ Tsp Salt 
  • ¼ Tsp Turmeric 
  • Water 2 Cups
To Prepare Corn Sandwich:
  • 1 Cup Sweetcorn, boiled
  • 2 Tbsp Zucchini, finely chopped(you can use cucumber too)
  • 1 Tbsp Jalapeno, finely chopped(you can use bell pepper too)
  • ¼ Cup Cheddar+Mozzarella Cheese, grated
  • ¼ Tsp Red Chili Flakes(optional)
  • Salt to taste
  • 4 slices Bread, White/Brown
  • 4 Tbsp Avocado Sandwich Spread/Dressing 
  • 4 Tbsp Hot Caliente Salsa/Sandwich Spread
  • 4 Tsp Butter

Instructions:
To  Boil/Steam Corn on the cob in the Instant Pot:
  • Turn on the Instant Pot and add 2 cups of water.
  • Place the trivet and corn on the trivet.
  • Close the lid of the Instant Pot.
  • Using the Steam function, steam the corn for 3 minutes and QR.
  • Open the lid and take the corn out and let it cool completely before removing corn kernels(You can cool them by pouring the cold water).
  • Remove the corn kernels(Watch the video on how to remove corn kernels in a few minutes).

To Prepare Stuffing/Corn Cheese Mixture:
  • In a bowl, combine boiled sweetcorn, zucchini, jalapeno, cheese, salt, and red chili flakes, and keep it aside.

To Prepare Cheese-Corn Sandwich:
  • Generously butter each side of the slice of bread.
  • Now, evenly spread the Avocado sandwich spread on the upper side of the bread.
  • Top with the prepared corn-cheese mixture and some cheese.
  • Spread hot sandwich spread on the other slice of bread and place that bread on the 1st one and press gently and spread butter.
  • Meanwhile, heat a pan on medium to low flame and place the bread slice on the pan.
  • Toast bread on medium flame on both sides.
  • Toast till the bread turns a crispy and golden brown color.
  • Slice and serve corn cheese sandwich with avocado spread/sandwich spread. Enjoy!!!

  • Per serving contains 323 calories, along with 39.12 g carbohydrates, 15.5 g fats, and 8.21 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
To Prepare Cheese-Corn Toast:
  • Generously butter each side of the slice of bread.
  • Now, evenly spread the Avocado sandwich spread on the upper side of the bread.
  • Top with the prepared corn-cheese mixture and some cheese.
  • Meanwhile, heat a pan on medium to low flame and place the bread slice.
  • Then cover and cook for about 2-3 minutes or until the cheese melts(by this time, the bread also gets toast properly).
  • Take them out of the pan when done, sprinkle chili flakes and slice, and serve immediately. Enjoy!!!

  • Per serving contains 196 calories, along with 21.6 g carbohydrates, 2.1 g fats, and 5 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
Tips/Substitutes:
  • You can use frozen corns too if using a frozen skip Instant pot steaming method.
  • You can prepare corn stuffing ahead of time too.
  • You can add more vegetables like carrot, onion, tomatoes, or boiled green peas to make it more healthy.
  • You can use mayonnaise/green chutney in place of the avocado sandwich spread.
  • You can use ketchup/tomato sauce/pizza sauce in place of hot salsa/sandwich spread.
  • If making for kids you can skip red chili flakes and jalapeno.
  • Instead of adding cheese, you can add sour cream/mayo.
  • You can add Italian seasoning to the mixture for a variation.
  • Add any cooked vegetable of your choice.
