How to Make Creamy Avocado-Spinach Dressing?
Hello Foodies,
         Vibrant, rich, and creamy, Avocado-Spinach Dressing is a great no mayo/vegan option for a pasta dressing/sauce, bringing all of the flavors in the dish together. It is a great healthy and light pasta sauce that is so much better than store-bought! There is still no better or more delicious way to eat your greens. So no bottled dressing needed, whip up the most delicious pasta salad at home with these quick and easy green pasta salad dressing recipe! 


         Here in Florida, it already feels like Summer. So its time to beat the heat and chill! To chill, let’s make the pasta salad dressing first, and it’s simply the right thing to do. It turned out Incredibly Tasty!! Creamy and it didn’t feel like raw spinach at all. I pureed in the blender and got a beautifully smooth and creamy consistency with no spinach /avocado chunk. I also enjoyed the leftovers another day to make lunch pasta salad.

          It is full of flavor and can be made in advance for drizzling over salads! If you’re meal prepping, feel free to store the salad and dressing in separate airtight containers in the fridge, bring dressing back to room temperature, then combine before serving. I also used the extra on everything from bread, sandwiches, roasted vegetables, rice bowls, chicken, to tacos. Avocados give the pesto a creaminess that allows for less oil. 


NOW, LET MAKE AVOCADO-SPINACH DRESSING!
This easy and instant homemade salad dressing recipe pair perfectly with Pasta Salad!

Preparation Time: 5 Minutes.

Ingredients:
  • 2 Avocados, ripe, peeled, and cored
  • 1 cup Spinach
  • 1/2 cup Cilantro/Coriander leaves
  • 1 Jalapeno, Small(seeded)
  • 3 Tbsp Lemon juice 
  • Salt and pepper to taste
  • 2 tablespoon extra-virgin olive oil

Instructions: 
  • Place all the ingredients In a food processor or blender.
  • Blend/Pulse until smooth, creamy, stopping to scrape down the sides a few times. 
  • If you’d like to make your dressing thinner, just add a little more water. Enjoy!
  • Keep in an airtight container for 2-3 days.
  • If the dressing is too thick, simply add milk/water one teaspoon at a time to thin it out to the desired consistency.

Tips, Substitute/Variation:
  • You can add regular yogurt or Greek yogurt or sour cream to make dressing creamier.
  • I’d recommend keeping it in the fridge for 1-2 days for freshness.
  • Thin the salad dressing out by adding water until it reaches the desired consistency, and I haven’t used water as we like it thick and creamy.
  • If you like, you can add garlic 1 clove, but remember garlic has a strong smell, so recommend roasting it first.
  • If you don’t like cilantro, then try with basil, mint, or dill. They will work well!
  • You may substitute olive oil with either rice bran oil, til oil, or canola oil.
