How to Make Soya Chunks Curry / Soya Nuggets Curry

How do you make protein-rich soya chunk curry? Here is my recipe to make tasty Soya Chunks Curry. In this dish, soya chunks are cooked in a creamy and delicious sauce. Obviously, we all love's Maa ke hath ka khana(food cooked by Mother), and this Soya Chunks Curry prepared the way my mom makes is one of my favorites.
I love this curry because of its simplicity and flavors. Soya chunks are one of the best protein content legumes who follows a vegetarian diet. They often use soy to replace meat. I have used Nutrela's soya chunks and would highly recommend it. Soya chunks easily absorb any flavors that you are cooking with. You can prepare a lot of recipes with soya chunks/soya nuggets.

It might look like there are many ingredients, but most of these ingredients are easily in most grocery stores. Once you get them and have it ready, the cooking process is very simple. So do try it out at home. A healthy and delicious gravy for chapati, bhakri, and naan.
What is Soya Chunks/Nuggets?
Soy meat or nuggets or soya chunks is a defatted soy flour product, a by-product of extracting soybean oil. These nuggets are protein-rich and used to make biryani, curries, stir fry, and patties too. Soya chunks provide all of the essential amino acids for human nutrition, which is popularly used as a substitute for meat.
How to Cook Soya Chunks?
- Wash and boil soya chunks in water for 5 minutes with salt, turmeric.
- Once done, run them under cold water.
- Squeeze soya chunks completely to remove extra liquid, and soya chunks are ready to use to make the dish.

Ingredients:
To Boil the Soya Chunks:
- Soya Chunks 1 Cup
- Water 3 Cups
- Turmeric ½ Tsp
- Salt ½ Tsp
- Green chilies 3 strips
To Make the Gravy for Soya Curry:
- Onion 1 small
- Tomato 1 small
- Green chilies 3
- Garlic 3 cloves
- Ginger 11 g
- Coriander stems 2 Tbsp(you can use coriander leaves)
- Poppy seeds 1 Tsp
- Sesame seeds 1 Tsp
- Oil 1 Tsp
- Water 3-4 Tbsp/as needed to grind the gravy
To Roast the Soya Chunks:
- Cooked and Drained Soya Chunks
- Oil 1-2 Tsp
To Make Soya Curry:
- Roasted Soya Chunks
- Prepared Gravy paste
- Red chili powder 1 Tbsp
- Goda Masala/Garam Masala 1 Tbsp
- Turmeric ½ Tsp
- Coriander Powder 1 Tsp
- Asafoetida 1 pinch
- Salt ½ Tsp
- Coriander Leaves 2 Tbsp, chopped.
- Cumin-Mustard seeds 1 Tsp
- Bay leaf 1
- Veg.Oil 2 Tsp
- Water 2 Cups
Instructions:
To Cook Soya Chunks:
- In a pan, add 3 cups of water, salt, turmeric, and green chilies 3 strips and bring it to boil.
- Add soya chunks cook for 4-5 minutes, or until soya chunks soften.
- Once, the soya chunks have become soft, strain them and run them under cold water.
- Squeeze soya chunks completely to remove extra liquid and keep it aside.
To Roast Soya Chunks:
- Heat 1-2 tsp oil in the pan and roast cooked soya chunks.
- Stir fry for around 5 minutes on medium flame until it turns light brown and once done keep it aside.
- Roasting it makes it perfect for making the delicious soya chunk curry.
To Prepare Masala Paste/Gravy:
- Heat 1 Tsp oil in a pan and add onion, ginger, garlic, and green chilies and saute and cook for 2-3 minutes.
- Now add coriander stems, tomatoes, poppy seeds, sesame seeds and saute and cook for 2 minutes and let it cool completely.
- Once cooled, blend into a smooth paste, if needed, add water and keep aside.
To Prepare Soya Chunks Curry:
- Heat oil in a pan and splutter cumin and mustard seeds and add a bay leaf.
- Now, add prepared masala gravy paste and saute and cook for 2-3 minutes.
- Add red chili powder, goda masala, turmeric, coriander powder, asafoetida, salt, and mix well.
- Add cooked soya chunks and water, mix well and cook for 4-5 minutes on medium flame.
- Garnish with Coriander leaves and soya chunks curry is ready to serve.
- Serve with chapati/Bhakri/Naan or with jeera rice. Enjoy!!!
Recipe Notes:
- You can use any spicy chili powder/kitchen king masala if you don't have goda masala/garam masala.
- Wash cooked soya chunks in cold running water for 2 or 3 times, and it helps to reduce the raw smell from soya chunk.
- Make sure to cook soya well and squeeze off the water; otherwise, they might be smell terrible as they are rich in protein.
- You can add a tbsp of milk while cooking soya to remove the smell from soya chunks.
- You can add any other veggies, like green peas, potatoes, cauliflower, or any other vegetables.

- The calorie count is based on a 2000 calorie diet.
- Per serving contains 156 calories, along with 16.3 g carbohydrates, 5.4 g dietary fiber, 7.02 g fats, and 11 g protein.
- Portion size can always be increased or decreased depending on your health goals and activity level.
