Shevgyachya shenganchi amti or drumsticks curry is a unique spicy recipe of a Maharashtrian kitchen, made with simple ingredients that are easily available in your kitchen pantries such as onion, tomato, and toor dal or pigeon peas. In this recipe, just minimal things make this curry so tasty and mouthwatering. It is another healthy way to eat veggies.

This curry goes well with steamed rice, chapati or bhakri. Drumstick is used in Sambar, lentils or in the form of soup but this recipe. Drumstick curry can be cooked in many ways, and all parts of India have their version of the curry.

Ingredients :
- Toor Dal / Pigeon peas ½ cup
- Veg oil 2 tbsp
- Mustard seeds 1 tsp
- Cumin seeds 1 tsp
- Curry leaves
- Onion 1 small, chopped
- Tomato 1 small, chopped
- Garlic 3 cloves
- Ginger 11 g
- Red chili powder 1 tbsp
- Garam masala 1 tsp
- Coriander powder 1 Tsp
- Turmeric powder 1 Tsp
- Asafoetida 1 pinch
- Salt 1 Tsp
- Water 3 to 4 cups
Instructions:
- In a kadhai add ½ tbsp of oil, a pinch of asafoetida, ½ tsp turmeric powder and drumsticks and water cover and cook for 4 to 5 minutes. Meanwhile, in a pressure cooker cook too dal or pigeon peas.
- In a pan add oil, once oil is hot add mustard seeds, Cumin seeds, curry leaves, let them splutter and add chopped onion and saute till onion becomes slightly pink.
- Let it simmer for a few minutes more, cook on a medium flame with the lid closed for 5 to 6 minutes.
- Here, spicy, healthy and tasty drumsticks curry or shevgyachya shenganchi amti is ready to serve. Serve hot with rice, chapattis or Bhakris. Enjoy!!!
