How to Make gluten-free, Vegan and Winter Special Bhogichi Bhaji / Mix Veg. Curry in the Instant Pot

In this delicious dish, Veggies are simmered in spiced sesame-onion sauce and served with whole wheat phulkas/Bajre ki Bhakri to make this super easy and incredibly delicious mixed vegetable curry. It was so easy, so good, and I’ll be totally honest, once you try it, you will make it again and again. It is a vegan, gluten-free, and healthy recipe to try this winter.
Makar Sankranti is around the corner, and I am sure you are busy in preparation for Bhogi and Sankranti festival. So here is one of the traditional recipes of mix vegetable curry (Bhogichi Rassa Bhaji). This year give this mix veg curry a try and treat your family and friends with this tasty curry.

This vegetarian curry is a great winter warmer and tastes heavenly with sesame seeds-Bajra roti(Tilachi Bhakri). Add the veggies with your favorites, or whatever you have on hand. But keep in mind that harder veggies may take a bit longer to cook, while softer veggies will cook up more quickly. Leftovers of this dish stay great! Store them in an airtight container in the fridge for 3-4 days. And reheat in the microwave or a saucepan on the stove. Add some water if it gets too thick!
So, here is my simple and easy recipe for whipping them up with plain rice, hot, puffed up, and crispy bhakri. When you are ready to eat, just reheat and garnish with freshly chopped coriander, and you're ready to go!

Veggies:
- Common Beans / घेवड्याच्या शेंगा, 2 cups(Watch the video to know how to peel and cut the beans)
- Carrots / गाजर, ½ cup
- Green peas / ओला वाटाणा, ¼ Cup
- Eggplant / वांगी 2, cubed
- Potato / बटाटा 1, Cubed
- Peanuts 2 Tbsp
To Make Sesame Masala/Gravy:
- Goda Masala / गोडा मसाला 1 tsp
- Sesame seeds / तीळ 1 tbsp, dry roasted
- Onion / कांदा 1, chopped
- Peanuts powder / शेंगदाण्याचा कुट 2 Tbsp(dry roasted)
- Red chili powder / लाल तिखट ½ tbsp
- Turmeric Powder / हळद, ½ tsp
- Asafoetida / हिंग, 1 pinch
- Salt / मीठ, 1 tsp
- Coriander leaves / कोथिंबीर ¼ cup
- Oil / तेल, ½ tsp
Other Ingredients:
- Cumin seeds / जिरे, 1 tsp
- Mustard Seeds / मोहरी, 1 tsp
- Oil 2 Tsp
- Water 1 Cup
Instructions :
To Prepare Masala:
Heat ½ Tsp oil in a pan and saute onion and coriander leaves for 2-3 minutes.
Now add peanut powder, sesame seeds, red chili powder, asafoetida, goda masala, and salt and mix well.
Turn off the flame and let it cool completely before blending.
Blend the masala to make a fine paste(if needed, add water).
To Prepare Mix Veg Curry(Bhogichi Bhaji) in the Instant Pot:
- Wash, peel, and cube all the veggies and keep it aside. (potato, eggplant, green peas, carrots, and common beans).
- Turn on the saute mode of the instant pot and heat oil.
- Now splutter cumin-mustard seeds and peanuts and saute for a minute.
- Add common beans, potatoes, carrots, eggplants, and green peas and mix well.
- Now add prepared masala and mix well.
- Add water 1 Cup and stir well.
- Turn off the saute mode of the instant pot and close the lid.
- Place the vent on the sealing position.
- Pressure Cook(Hi) for 2 minutes and NPR for 10 minutes.
- Open the lid and stir well.
- Healthy and tasty mix veg curry (Bhogichi Bhaji)is ready to serve.
- Serve with Til-Bajre ki bhakri with a dollop of ghee or with any Indian flatbread. Enjoy!!!

- The calorie count based on a 2000 calorie diet.
- Per serving contains 195 calories, along with 16.4 g carbohydrates, 4.8 g dietary fiber, 10.34 g fats, and 4.65 g protein.
- Portion size can always be increased or decreased depending on your health goals and activity level.
