          How was your new year celebrations? I hope it was awesome. New Year's celebrations began early for us. So, Dr.K and I went to one of the beachside pubs, where people gathered together and enjoyed the party, music, lights, fireworks, food and delightful drinks at the pub. Plenty of refreshments and time to visit with each other and to laugh with friends. It was fun to interact with each other, and getting some new friends. As midnight approached, we prepared to count down. Shortly after midnight, we left the party to be off the roads early but did stop in at the pizza place for a pizza slice before going home(Now, it became a tradition for almost half-decade). Then, on New Year's day itself, one of our friends hosted a New Year's brunch with all of the foods and drinks. We played some games, had some gossips, laughter, and came back home. So it was our NYE and NYD. I hope you had fun and enjoyed your holidays.

           So now, let's speak about my new year's first post, its Sesame Seeds Bars / Tilgul-Khoya Burfi. As we start new things eating something sweet, so I continued my new year's blogging journey with these decadent, healthy sesame bars. It is a popular and traditional recipe with many variations throughout Indian, Asian, and Middle Eastern cuisines. These 4-Ingredient Sesame Seed Crunch Bars are perfectly sweet, nutty, gluten-free, and optionally vegan! Just dry roasted sesame seeds, peanuts, khoya, and jaggery. 


Easy to make in the instant pot and munch on! I have prepared khoya in the instant pot. And if you and your family love khoya or khoya based Indian sweets(Mithai), then you know how much satisfaction of making homemade fresh khoya without any preservatives. So I have prepared 3-4 batches of khoya in my Insta Pot, and I am using that to make delicious sweets for the upcoming Indian Festival Makarsankranti. So I am ready with the big batches of Instant Pot Ghee and Khoya. Are you ready for Makarsankranti?


      This is an authentic Indian recipe for sesame-khoya bars called Tilgul-Kawa Burfi(तीळगुळ-खवा बर्फी). These bars are mouthwatering and so addictive! Eat one bite, and you will drool and reach for another. Sesame is an excellent source of protein, a good source of calcium and iron, contains good fats among the seeds. And also, it contains antioxidants and fiber. The jaggery acts as a sweetener. Peanuts add unique taste and texture to the bars. 

The majority of fats in peanuts are heart-healthy, and that makes you choose them over a less healthy snack. They are a great snack during the winter days, and adults, as well as kids, love them too. This version adds desiccated coconut and thinly sliced pistachios for garnishing(you can skip them)or feel free to use any nuts or seeds to garnish. So let's get started!
             Preparing this burfi is very simple and easy, requiring little time and ingredients. So, follow this simple and Instant pot recipe of til-mawa burfi. It's naturally gluten-free and healthy. The best thing about this burfi is that it will be edible for almost 2-3 weeks, store these bars in an airtight container, and keep in the refrigerator.


Preparation Time: 20 Minutes; Cooking Time 20 Minutes.
Each Sesame Seeds Bar Contains 98 Calories.

Ingredients:
To Prepare Khoya in Instant Pot:
  • Milk Cream(heavy) ¼ Cup(approx. 50ml)
  • Milk Powder 1 ½ Cups (approx. 150 g)

To Prepare Sesame Seeds Bar:
  • Sesame seeds powder(dry roasted) 2 Cups
  • Peanuts Powder (dry roasted) 1 Cup 
  • Homemade Khoya / Mawa ½ Cup
  • Jaggery/Brown Sugar 2 Cups + water 1/4 cup
  • Desiccated Coconut 1 tbsp + Pistachios for garnishing 
  • Ghee to grease the plate/pan

Instructions:
To Prepare Khoya Using Instant Pot:
  • In a bowl, add milk cream and milk powder and using hand knead to make a dough.
  • Transfer dough over cotton cloth/muslin cloth and wrap well.
  • Turn on instant pot and add 1 cup of water and place a pan
  • Close the lid and steam it for 10 minutes.
  • Turn off the instant pot and open the lid and take out the pan.
  • Let it cool completely, and khoya is ready to use.


To Prepare Jaggery Syrup and Sesame Bars:
  • Grease a tray or plate for setting the barfi.
  • Dry roast sesame seeds, peanuts and grind to make powder. 
  • Grate/Crumble the khoya and combine with the peanuts and sesame seeds powder and keep aside. 
  • Heat pan on medium flame and add jaggery and water and simmer until it melts completely.
  • Cook for 3 minutes, and it will become frothy.

Jaggery Consistency Check:
  • Keep a separate bowl ready filled with little water.
  • Take a drop of jaggery syrup and put it in water; it should stand firm and not dissolve, as shown below. 
  • It should form a nonsticky softball.
  • After 10-12 seconds, it holds the shape and leaves the bottom of the bowl that means the syrup is ready, and that time turns the flame to low. 
  • Now, to the jaggery syrup, add a mixture of sesame seeds, peanuts, and khoya and stir to mix up well. 
  • Mix until everything blends into each other and gets dense consistency.

To Set the Barfi /Sesame Seeds Bars:
  • Transfer the mixture into the ghee greased tray/plate and spread evenly. 
  • Sprinkle the desiccated coconut and thinly sliced pistachios over the mixture to garnish.
  • Press them gently with a spatula, let the burfi cool down for 15 minutes.
  • After 15 minutes, cut the burfi into the desired shape and size. 
  • Now let the burfi cool down completely and, after that, separate it from the plate.
  • Healthy and delicious sesame seeds bars / til-gur barfi is ready to serve. Enjoy!!!

My Take:
  • The sesame seeds turn bitter if over-roasted, so do not over roast the seeds.
  • The size and shape of the burfi can be small or big as you like.
  • Store this barfi in an airtight container, and it can be edible for more than 3 weeks.
