How to make Tilgul Poli / Tilachi Poli / Gulachi Poli / Til Gul Ki Roti
Hello Foodies,To celebrate the Indian Festival of Harvest prepare this melt in the mouth and sweet delicacy of Maharashtra Tilgul Poli. Tilgul Poli is a traditional recipe made on Makar Sankranti. It's stuffing prepared from Til (sesame seeds) & Gul ( jaggery). This Gulpoli is prepared as a naivedyam (offering) for God. It is very crispy, tempting and you can eat it for one week.

Each Tilgul Poli Contains 206 Calories.
Ingredients:
- Sesame Seeds/Til / तीळ 1 cup
- Jaggery 1 cup
- Peanuts powder, ½ cup, dry roasted
- Dry/Desiccated Coconut, 2 tbsp
- Cardamom powder 1 tsp
- Ghee 1 tbsp
- Whole Wheat flour 1 ½ cup
- Salt 1/2 Tsp
- Veg. oil 2 tsp
- Water to knead the dough
Instructions:
To Make Dough :
- In a mixing bowl add wheat, salt and by adding water knead a soft dough as in roti/paratha and pour some oil, and keep aside.
To Make Stuffing of Tilgul :
- Dry roast sesame seeds until it get a deep golden color and grind it.
- In another bowl add dry roasted and ground sesame seeds, peanuts, coconut, and grated jaggery, cardamom powder, and ghee.
- Mix all very well and divide it into equal portions.
To Make Tilgul / Gul Poli :
- Divide dough into equal portions and take one dough ball, roll out one portion of the dough into a 4 to 5 diameter circle using a little whole wheat flour for rolling or you can roll dough by using fingers as shown in vide
- Place a portion of tilgul stuffing in the center and fold the edges of the dough over the filling. Pinch the edges together to seal the filling.
- Flatten the dough and roll again to make tilgul poli using a little whole wheat flour for rolling.
- Cook on a tava over a medium flame, till it turns golden brown in color from both the sides by smearing ghee or oil.
- Repeat with the remaining dough and make more tilgul polis. Smear a little ghee on each tilgul poli and serve hot.
- Here, flavorsome and sweet Tilgul Poli is ready to serve. Serve hot with milk, ghee. Enjoy!!!
My Take:
- To make a vegan version you can totally avoid ghee or replace it by adding veg. oil.
- If you want to make less or more sweet Poli, just adjust the jaggery quantity to your taste.
- I have used whole wheat flour, you can totally use all-purpose flour or maida.

Based on a 2000 calorie diet.
Per serving contains 205 calories, along with carbohydrates - 19.3 g, dietary fibers - 2.57 g, fats - 8.53 g, proteins - 4.3 g.
