How to Make Badam Rava Burfi | Suji ki Burfi | रव्याची बर्फी

Preparation Time: 10 Minutes; Cooking Time 20 Minutes.
Each Badam-Rava Burfi Contains 75 Calories.
Ingredients:
- 4 Tbsp Ghee/Clarified Butter
- 1 Cup Chiroti Rava/Semolina/Sooji
- ¼ Cup Almond Flour/Badam Flour
- 1 Cup Sugar
- 1 Cup Water
- Few Saffron Strands+Pinch of Orange Food Color(Optional)
Instructions:
Step1 - To Roast Rava
- In pan heat ghee and roast rava on medium to low flame.
- Saute and cook for 5-6 minutes or until it turns aromatic and light brown color.
- Now add almond flour and roast for 2-3 minutes and keep aside.
Step 2 - To make Sugar Syrup
- In a pan, add sugar and water, mix well and bring it to boil on a medium flame.
- Add cardamom powder, saffron strands, and lemon juice and mix well.
- Keep stirring and check its consistency after 4-5 minutes.
- It takes approximately 8-9 minutes to get one string/one thread consistency.
- To check the sugar syrup consistency, dip a spatula in the syrup and lift out.
- Allow it to cool for a few seconds(as it will be very hot at first).
- Now touch the syrup with a forefinger and thumb together and pull apart gently.
- One-thread consistency is when a single thread is formed when your forefinger and your thumb are pulled apart gently.
- One string consistency sugar syrup is ready.
Step 3 - To Set the Barfi / Rava-Badam Burfi
- Pour the sugar syrup into the roasted rava-badam mixture.
- Keep the flame on low, stir well, and make sure the mixture is combined well and there should be no lumps present.
- Keep mixing till the rava absorbs all the syrup and starts to separates from the pan.
- Take some mixture on the plate and let it cool for a few seconds and if the mixture comes together without sticking that means it's ready to set.
- Transfer the mixture into the ghee greased tray/plate and spread evenly.
- Press them gently with a spatula, cut the burfi into the desired shape and size.
- Now let the burfi cool down completely and, after that, separate it from the plate.
- Delicious Rava-Badam Barfi is ready to serve. Enjoy!!!
Tips:
- Roast Semolina on medium to low flame.
- The semolina turns bitter if over-roasted, so do not over roast it.
- The size and shape of the burfi can be small or big as you like.
- Store this barfi in an airtight container, and it can be edible for more than 2 weeks.
