Instant Pot Rava-Mawa Ladoo(Sooji Ke Laddu in Pressure Cooker): Easy Dessert Recipe

Hello Foodies,
          Made this soft, moist and festive flavors dessert, ladoos(balls/truffles/laddus) in my new Instant Pot Ultra is Kesar Rava-Mawa Ladoo (Semolina Ladoo) My Brother's favorite. As Raksha Bandhan is around the corner and to celebrate these brotherly-sisterly moments that we’ve spent with our siblings, I have prepared this Kesar Rava-Mawa Ladoos(also have made some Rakhis and my gift is ready to go).


What is Rakshabandhan?
   Its a bond of a brother and sister share by celebrating it as the festival of "Raksha Bandhan." The word Rakshabandhan is made up of two Sanskrit words, 'Raksha' and 'Bandhan,' and it means the knot of protection. No other relationship is as vibrant and nurturing as the one siblings share — those fights, the annoying stuff, complaining about small things to parents and whatnot. But when the occasion is of rakhi, my excitement gets quadrupled. This write-up is solely dedicated to my loving brothers. So how about you do a little something for him this time, to surprise him big time.

         This Kesar Rava (Sooji/Semolina)-Mawa Ladoos made using six ingredients and in 30 minutes. This is super quick and super easy dessert recipe made in Instant Pot Ultra. It is beginners ladoo recipe and needs no expertise. No worries about making one string or 2 string sugar syrup and no need to roast Semolina /Rava for hours and hours. It's simple, quick, and super easy to make. So for festive occasions like Raksha Bandhan, Ganesh Chaturthi, Diwali, this Instant Pot Kesar Rava - Mawa Ladoo is apt and it can be easily made in less time. 


          It is a foolproof and no sugar syrup needed dessert. With sugar syrup consistency, things can go wrong, and you may get a hard and brittle ladoos. But since in this Instant Pot Rava-Mawa Ladoo, there is no sugar syrup, and the result is soft, moist and aromatic ladoos. In other Rava Ladoo Recipes, you need to roast rava for a long time, cooking rava in instant pot made this task hassle-free or time-saving. 
          To make this rava Ladoo more aromatic, I have added freshly made Khoya(khawa/Mawa made in Instant Pot)and saffron milk. You can add freshly grated coconut or desiccated coconut too.

Which Semolina(Rava/Sooji) is used to make Rava Ladoo:
  • I have used fine rava(swad), do not use coarse rava as it does not get roasted well.
  • You can use chiroti rava too(if you find it in a grocery store).
  • So please do not use Semolina which is larger in size and coarse.

Each Rava-Mawa Ladoo Contains 129 cal.



Ingredients:
  • Semolina/Sooji/Rava 1 Cup
  • Mawa/Khoya 1 Cup
  • Powdered Sugar 1 Cup
  • Saffron strands(15-20)+ Warm Milk 1 Tbsp
  • Cardamom Powder 1 Tsp
  • Ghee 2 Tbsp
Instructions:
  • In a bowl add semolina, and mawa and mix well.
  • Sieve semolina-mawa and add the mixture into the pan and cover the pan.

To Cook Mixture into the Instant Pot:
  • Add 2 cups of water in the insert of the Instant Pot.
  • Place the trivet and the pan and close the lid.
  • If the display is off, press the dial to turn on the display.
  • Press the dial to select the pressure cook option.
  • The cooking time (in my case it’s 00:02 i.e., 2 minutes; your display may have a different time) will have a box around it that’s blinking.
  • Press the dial to select the cooking time and now, the time will be blinking.
  • Turn the dial until the time changes to 00:08 (8 minutes) and press the dial to confirm the time.
  • Cook on pressure cook mode(Pressure-High, Delay-Off, and Keep Warm-On) for 8 Minutes.
  • The Instant Pot Float Valve will go from the down position to the up position once the Instant Pot has sealed(This took 10-12 minutes for me).
  • The display will change from ‘On’ to 8 minutes (00:08) and will count down from 00:08 to 00 00(see the graph on the bottom tells you the cooking progress).
  • The natural release of pressure (NRP), press the cancel button and open the lid of Instant Pot.
  • Take out the pan and open the lid and let it cool for 8-10 minutes.
To Prepare Kesar Rava-Mawa Ladoo:
  • After 10 minutes, mix the cooked mixture and break the lumps if present.
  • Again strain the mixture and add powdered sugar, cardamom powder, and mix well.
  • Now add saffron milk, ghee and mix well and let it sit for 5 Minutes.
  • After 5 Minutes, take a handful portion of the mixture and roll to make ladoos/truffles.
  • Garnish with saffron strands.
  • Soft, delightful, and moist ladoos are ready to serve. Enjoy!!!
To Prepare Rava-Mawa Ladoo in Indian Pressure Cooker:

  • In a bowl add semolina, and mawa and mix well.
  • Sieve semolina-mawa and add the mixture into the pan and cover the pan.
  • Add 2 cups of water into the pressure cooker and place the pan with the trivet.
  • Close the lid with the whistle on and make 5 whistles.
  • Once done turn off the flame and normal release of pressure.
  • Take out the pan and let it cool for 8-10 minutes.
  • After 10 minutes, mix the cooked mixture and break the lumps if present.
  • Again strain the mixture and add powdered sugar, cardamom powder, and mix well.
  • Now add saffron milk, ghee and mix well and let it sit for 5 Minutes.
  • After 5 Minutes, take a handful portion of the mixture and roll to make ladoos/truffles.
  • Garnish with saffron strands

Why is Ladoos not holding shape and breaking?
  • It means the mixture is dry, so add more ghee, ghee is a binding ingredient in this recipe.
Why is Ladoos becoming flat and not holding the shape?
  • It means Ghee has become slightly more, so for that, you need to add dry roasted semolina 2-3 Tbsp.
  • Or keep the mixture into the refrigerator for about 15-20 minutes, and then ghee will solidify a bit and then it will be easy to give it a shape.
How to store Rava Ladoos and its shelf life?
  • Refrigerate the Rava Ladoo in an airtight container.
  • If kept at room temperature it will be edible for 3-4 days.
  • If refrigerated they will be edible up to week or two.

My Take:
  • This Rava Ladoo recipe can be doubled or tripled.
  • You can add less or more sugar as per your taste.
  • You can skip adding the saffron milk and add 1 Tbsp of ghee.
  • Allow the mixture to cool down before trying to make ladoos fully.

Dietary Comment :
  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 129 calories, along with 20.5 g carbohydrates, 4 g fats, and 3.4 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
