Eggless Banana Wheat Moist Cake in Instant Pot Ultra: Easy Pressure Cooker Cake Recipe

Hello Foodies,
          I like putting bananas in smoothies, milkshakes, and baked goods. They are great for breakfast and snacks. If you have some bananas on your counter that are just waiting to be used, try this 30 minutes healthy, egg-free, banana-whole wheat flour- finger millet flour cake, which is made in my new Instant Pot Ultra 6 Qt using its cake function. You can see the full proof result. 

      So what’s better than banana cake? When it's egg-free, whole wheat flour used, and lastly, you add a chocolate sauce/syrup to the top and garnish with some slivered almonds. Then it becomes best! This Healthy banana cake is my new favorite because I feel like I can eat it for snacks or breakfast! Without as much guilt. It’s perfectly sweet and soft, full of banana flavor, and is coated in a grated dark chocolate exterior. 

        Made this butter-free, egg-free cake, and to compensate, I added milk and vegetable oil for some fat. I used whole milk, but you can substitute with 2% milk. I used a combination of whole wheat flour and finger millet flour(Ragi Flour). I also added grated dark chocolate, but that was to make it prettier. And, because I love love love chocolate. But they’re optional if you don’t want the added calories. It's simple to put together and bakes up into a moist and perfect cake.

How to Make a Cake In An Instant Pot Ultra 6qt.:
  • Making a cake in instant pot is quite easy! 
  • Make the cake batter similarly as you would make for a cake that baked in the oven.
  • Use a Bundt pan or the pan which will fit in your instant pot and pour the prepared batter.
  • Cover the pan with aluminum foil and place on a trivet.
  • But instead of being baked in the oven, the cake is cooked on high pressure in instant pot ultra.

The texture of cakes made in instant pot:
  • Cake in an instant pot is steamed(even though there is cake/bake option) and so the texture is different than a baked cake.
  • Which Baking Pan I have used?
  • You need a cake pan which would fit inside an Instant pot. I have an Instant pot ultra 6 Qt, and I used a 6 cup bundt pan for this cake.
  • This Instant Pot Ultra Banana-Wheat-Ragi Cake is:
  • The perfect for breakfast or snacks or can be enjoyed as a dessert! 
  • You get the cake without turning on your oven.
  • Healthy+Egg Free
  • Packed with healthy ingredients
  • Drizzled with dark chocolate syrup and topped with slivered almonds.

Preparation Time: 15 Minutes; Cooking Time: 25 Minutes
Each Serving of Banana-wheat-ragi cake contains 187 Cal

  • Whole Wheat Flour 1 Cup
  • Ragi Flour /Finger Millets ¼ Cup
  • Banana 1, overripe
  • Oil ¼ Cup
  • Vanilla Extract 1 Tsp
  • Dark Chocolate 3 Tbsp, grated
  • Sugar ¼ Cup
  • Baking Powder 1 Tsp
  • Baking Soda ½ Tsp
  • Salt ⅛ Tsp
  • Milk ½ Cup(at room temperature)

To Prepare Banana Cake Batter:
  • In a bowl mash overripe banana and keep aside.
  • Now, add oil, vanilla extract, sugar, and milk to the mashed banana and mix until sugar dissolves completely.
  • Now, in a separate bowl, sieve wheat flour, ragi flour, baking powder, baking soda, and salt together.
  • Add flour mixture to wet ingredients and mix everything well and make a smooth batter of pouring consistency.
  • Lastly, fold in grated dark chocolate and pour batter into greased bundt pan and tap it.
  • Garnish it with grated dark chocolate or with your choice of dry fruits and cover it with aluminum foil.

To Bake Banana Cake in the Instant Pot Ultra 6qt:
  • Add 1 ½ Cups of water in the insert of the Instant Pot.
  • Place the trivet and the pan and close the lid.
  • If the display is off, press the dial to turn on the display.
  • Press the dial to select the cake option.
  • The cooking time (in my case it’s 00:40 i.e., 40 minutes; your display may have a different time) will have a box around it that’s blinking.
  • Press the dial to select the cooking time and now, the time will be blinking.
  • Turn the dial until the time changes to 00:25 (25 minutes) and press the dial to confirm the time.
  • Cook on cake mode(Pressure-High, Delay-Off, and Keep Warm-On) for 25 Minutes.
  • The Instant Pot Float Valve will go from the down position to the up position once the Instant Pot has sealed(This took 10-12 minutes for me).
  • The display will change from ‘On’ to 25 minutes (00:25) and will count down from 00:25 to 00 00(see the graph on the bottom tells you the cooking progress).
  • Do a Quick Release of pressure (QRP), press the pressure release button until the pressure release and vent click to down.
  • Press the cancel button and open the lid of Instant Pot.
  • Remove aluminum foil and take out the Bundt pan, insert a toothpick and check if it's done or not(If the inserted toothpick comes out clean then it's done and let it cool for 10-15 minutes).
  • After 15 minutes loosen the sides of the bread from the pan with the knife and remove the cake from the pan.

To Garnish/Toppings:
  • Pour some dark chocolate sauce and sprinkle some slivered almonds.
  • Delicious, banana, whole wheat flour, finger millet flour, and egg-free banana cake is ready to serve. Enjoy!!!
My Take:
  • Never forget to add water into the insert of the instant pot before placing the trivet and pan(exception for yogurt preparation and sprouts), because water is needed for the pot to come to pressure.
  • Always remember to cover your cake pan with an aluminum foil as you put it inside the instant pot.

  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 187 calories, along with 30.78 g carbohydrates, 2.76 g dietary fiber, 6.5 g fats, and 3.3 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
