How to Make Sweet and Sour Tamarind Eggplant

Hello Foodies,

            Tamarind Eggplant is one of the Indian Chat/Appetizer dishes, in which Air fried Eggplant Chips are dipped and soaked in a sweet and tangy Tamarind-Date Sauce.

These Air Fryer Eggplant Chips are healthy and easy to make. They are made with 4 simple ingredients, that being Eggplant, red chili powder(mild), salt, and then soaked in the Tamarind -Date Sauce.

Eggplant absorbs the oil when it’s fried, so to solve that problem we start by air-frying eggplant in just a small amount of oil to make crisp-tender Eggplant Chips. Then I have soaked eggplant chips in a tart glaze of tamarind-date paste/sauce. Topped with a handful of sev for crunch and cilantro leaves at the end for a fresh touch. 

                One of my friends introduced me to this dish, Dr.K and I tried it the first time at her home and we just loved everything about this appetizer. So thought of trying and sharing with you guys. If you are an eggplant lover like us, do try this recipe and I am sure you all will love it too! You can make fresh, healthy chips in under 30 minutes! These are really just a crazy healthy version of potato chips but instead of carb-packed potatoes, they’re made with baked veggies/eggplant! They’re low in carbs and calories. These are paleo, vegan, and keto-friendly, low carb, and absolutely divine!

If you love yummy Indian Chat dishes, then this one is for you. And it is much healthier than traditional frying methods. So you can enjoy all the same deep-fried or baked foods that we have all come to know and love again but in a healthy way.

To Make Eggplant Chips in the Air Fryer:

  • Eggplant 2-3(Brinjal/Vangi/Aubergine)
  • Red chili powder 1 Tsp
  • Salt ½ Tsp
  • Olive Oil 1 Tsp

To Make Tamarind Eggplant:


To Make Eggplant Chips in the Air Fryer:

  • Preheat the air fryer at 390 F(200C) for 3 minutes
  • Slice the eggplant into thin slices.
  • Once the Eggplant is sliced, place them into a large bowl.
  • Now, toss sliced eggplant with red chili powder, salt, and olive oil. 
  • Place the eggplant chips in the Air Fryer’s basket and make sure they are not crowded.
  • Air Fry at 390 F for 5 minutes.
  • After 5 minutes flip them.
  • Air Fry at 400 F for 2 minutes or till they become crispy.
  • Crispy, tasty, and browned eggplant chips are ready.
  • Remove and allow to cool down.

To Make Tamarind Eggplant:

  • Now, in a bowl take Tamarind-Date sauce/Chutney.
  • Dip Air Fried Eggplant Chips into the Tamarind-Date Sauce/Chutney.
  • Line Eggplant Chips into the tray or pan.
  • Let them soak for 5-10 minutes or you can serve immediately.
  • Place the Tamarind Eggplant on the plate and sprinkle some sev and finely chopped coriander leaves.
  • Flavorsome and tangy Tamarind Eggplant is ready to serve. Enjoy!!!
