How to Make Vegan and Healthy Classic Minestrone Soup

What is a better way to warm up winter than with this Minestrone!? This has become an all-time favorite! Everyone can enjoy it because it can be made GF & vegan. Plus you can freeze it. So handy for busy weeknights or meal prep!

I’ve really been into soups & stews lately and with today’s cold nothing could be better! This Minestrone is warming the body and comforts the soul. Rustic, flavorful, filling, and nutritious, these bowls got it all! One-pot, using pantry staples you can make it today without a grocery run! It’s packed with colorful winter vegetables but is still rich and satisfying. It’s naturally vegetarian and completely addictive. I dare you to eat just one bowl!
This minestrone only took about 20 minutes to make in the instant pot and was delicious. Cannellini(white) and kidney beans, plus a good amount of veggies, make this super filling and satisfying.

Each Serving of Minestrone Soup Contains 201 Calories.
Ingredients:
- Olive oil 2 Tbsp
- Onion 1 medium, chopped
- Garlic 1 Tsp, minced
- Carrot ½ Cup, diced
- Zucchini 1 medium, sliced
- Celery ½ Cup, chopped
- Red Kidney Beans 1 Cup
- White Beans 1 Cup
- Tomato Sauce 1 Cup, canned
- Diced Tomatoes 1 can 14.5 oz
- Small Pasta(tiny shells or ditalini) ½ Cup
- Black Pepper 1 Tsp
- Salt 1 Tsp
- Oregano 1 Tsp
- Thyme 1 Tsp(dried)
- All-Purpose Seasoning 1 Tsp
- Veg. Broth 3 Cups
- Coriander leaves 2 Tbsp, chopped
- Vegan Grated Parmesan cheese, for topping(optional)
Instructions:
- Turn on the saute mode of the instant pot and heat olive oil.
- Add onion, garlic, carrots, zucchini, celery, red kidney beans, white beans, coriander leaves, black pepper, salt, oregano, basil, thyme, tomato sauce, and diced tomatoes, and mix well.
- Add pasta shells and vegetable broth, deglaze the pot and mix all well(scrape the base of the pot).
- Close the lid of the instant pot and place the vent in the sealing position.
- Pressure cook on Manual Mode(Hi) for 5 minutes.
- Natural Pressure Release(NPR) for 5 minutes and then release the remaining pressure manually.
- Open the lid and stir well.
- Cook for a minute or two or until getting the desired consistency.
- Taste and adjust pepper and salt if needed.
- Creamy, soothing Minestrone Soup is ready to serve.
- Ladle into bowls and top with some grated cheese and serve with some warm, crusty garlic bread. Enjoy!!!
- If you are serving this soup as a first course with pasta, then skip adding pasta to the soup.
- Don’t garnish with Parmesan, or use vegan Parmesan cheese to make it vegan.
- To make it gluten-free, substitute sturdy gluten-free noodles/pasta.
How to Store Classic Minestrone Soup:
- Refrigerate soup in an airtight container for up to 4-5 days and rewarm gently in the microwave.
- To Freeze: Freeze celery soup in an airtight freezer-safe container for up to 2-3 months and thaw overnight in the refrigerator before reheating.

- The calorie count is based on a 2000 calorie.
- Per serving contains 201 calories, along with 34.2 g carbohydrates, 9.6 g dietary fiber, 4.5 g fats, and 9 g protein.
- Portion size can always be increased or decreased depending on your health goals and activity level.
