How to Make Cream of Celery Soup in the Instant Pot

Hello Foodies,

        A simple, comforting, and detoxifying celery soup, that can be made in less than 30 minutes in the instant pot.

       This week we got a bunch of celery, so I sautéed it with butter, coriander leaves, onions, and garlic, and blended it with veggie stock. This instant pot Celery soup came out phenomenal! I paired it with a grilled cheese sandwich for a fantastic light dinner. I make this a few times a month, and it is also wonderful as a chilled soup in warm weather. You can be put this recipe on repeat when you have excess celery on hand.

Celery and coriander both are very high in water content, fiber, and very low in calories thus they are easily digestible. It is best for weight loss and great against cholesterol, high blood pressure, and diabetes! This instant pot, guilt-free detoxifying soup is low carb, and keto-friendly!

This soup has year-round potential and sometimes I serve this with some grilled shrimps. This soup can easily be made a day ahead.

Preparation and Cook Time: 20 Minutes.
Each Serving of Creamy Celery Soup Contains 120 Calories.

Ingredients:

  • 2 Cups Celery, Chopped 
  • 2 Tbsp Butter
  • 1 Onion, diced 
  • 1 Tsp Garlic, minced
  • 1/4 Cup Coriander leaves
  • 1 Cup Milk (instead of milk, you can use half and half ½ cup+heavy cream ¼ cup)
  • 2 cups Vegetable Broth
  • 1 Tsp Salt 
  • ½ Tsp Black Pepper
  • A Dash of Cayenne
  • Cheese/olive oil for serving(optional)

Instructions:

  • Turn on the saute mode of the instant pot and heat butter(olive oil to make vegan). 
  • Add onion, garlic, and saute and cook for 2-3 minutes.
  • Now, add celery, coriander leaves, black pepper, salt, a dash of cayenne, and mix well. 
  • Add vegetable broth, deglaze the pot and mix all well(scrape the base of the pot). 
  • Close the lid of the instant pot and place the vent in the sealing position. 
  • Pressure cook on Manual Mode(Hi) for 3 minutes.
  • Natural Pressure Release(NPR) for 5 minutes and then release the remaining pressure manually.
  • Open the lid and submerge the immersion blender into the pot, turn it on low.
  • Blend until the mixture begins to smooth.
  • Turn the speed to high and continue to blend until the desired soup consistency.
  • Turn on the saute mode of the instant pot.
  • Pour milk(you can use coconut/almond milk to make vegan) and stir well. 
  • Cook for a minute or two or until getting the desired consistency. 
  • Taste and adjust pepper and salt if needed.
  • Creamy, soothing Celery Soup is ready to serve, garnish with shredded cheese(to make vegan you can use olive oil) serve with toasted crusty bread or Grilled Cheese Sandwich. Enjoy!!!

  • Refrigerate soup in an airtight container for up to 4-5 days and rewarm gently in the microwave.
  • To Freeze: Freeze celery soup in an airtight freezer-safe container for up to 2-3 months and thaw overnight in the refrigerator before reheating.

  • The calorie count is based on a 2000 calorie.
  • Per serving contains 120 calories, along with 9 g carbohydrates, 1.5 g dietary fiber, 8.1 g fats, and 3.4 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
