How to Make Vegan and Healthy Tortilla Wrap

        Have you tried this trending TikTok Tortilla Wrap Hack yet? Well, well, we did try and we enjoyed this tortilla wrap trend with worldwide-inspired fillings, including Vegan Tortillas, Homemade Tortillas, low-carb wraps options, and more!


        The method gained a ton of attention and since has become viral on the internet! I have used, Homemade Whole Wheat Flour Tortilla and Aluvadi as a patty, Cucumber-Tomato-Bell pepper, Ketchup/Tomato Sauce/Tamarind-Date Chutney, or you can use Makhan(Loni/Butter)to make it tastier. The result is a hot, crispy, flavor-packed pocket that takes minutes to make. Serve it with Chai for Snacks or Breakfast. It is also perfect for lunch or dinner!

What is the viral ‘TikTok tortilla hack’? 

The tortilla trend shows a new way to enjoy a sandwich wrap with a tactically placed cut that allows you to fold the tortilla wrap in on itself to create four layers of fillings, making for easy eating. 

Ingredients used to Make Aluvadi Tortilla Wrap:

The Wrap/Tortilla: Commonly use Flour(APF) tortilla, I have used Homemade Whole Wheat Flour Tortilla. But you can use corn tortilla too.

The Filling: depending on how many folds you plan to make, you can choose between 2-4 different fillings per tortilla wrap. I have used Aluvadi, Ketchup or(Tomato Sauce/Date-Tamarind Chutney), Salad(Cucumber, Tomato, Bell Pepper).

To Roast: I have used few drops of oil for roasting tortillas. You can use butter too.

  • Make the cut in the center of the tortilla, make a cut outwards to the edge of the tortilla.
  • Add the fillings: divide the surface area into 4 parts(visually) based on the layers you want and place your toppings.
  • Place Aluvadi, cucumber slices, Ketchup, and Tomato-Pepper slices.
  • To Fold: Start folding the wrap from the right side of your cut and flip and flip again until you have a completely folded tortilla. 
  • Roast it(optional): you can roast tortilla wrap. I have roasted wrap on skillet/tawa, but you can use a sandwich press, or grill and roast for 1-2 minutes on each side, or until lightly browned.
  • Cut and enjoy Aluvadi Tortilla Wrap!!!

To Store:

  • Prepare tortilla wrap, and skip the roasting step, and store it in the fridge or freezer like any wrap in plastic wrap for later. The shelf life will depend on your fillings.

  • The calorie count is based on a 2000 calorie.

How to Make Cream of Celery Soup in the Instant Pot

Hello Foodies,

        A simple, comforting, and detoxifying celery soup, that can be made in less than 30 minutes in the instant pot.

       This week we got a bunch of celery, so I sautéed it with butter, coriander leaves, onions, and garlic, and blended it with veggie stock. This instant pot Celery soup came out phenomenal! I paired it with a grilled cheese sandwich for a fantastic light dinner. I make this a few times a month, and it is also wonderful as a chilled soup in warm weather. You can be put this recipe on repeat when you have excess celery on hand.

Celery and coriander both are very high in water content, fiber, and very low in calories thus they are easily digestible. It is best for weight loss and great against cholesterol, high blood pressure, and diabetes! This instant pot, guilt-free detoxifying soup is low carb, and keto-friendly!

This soup has year-round potential and sometimes I serve this with some grilled shrimps. This soup can easily be made a day ahead.

Preparation and Cook Time: 20 Minutes.
Each Serving of Creamy Celery Soup Contains 120 Calories.

Ingredients:

  • 2 Cups Celery, Chopped 
  • 2 Tbsp Butter
  • 1 Onion, diced 
  • 1 Tsp Garlic, minced
  • 1/4 Cup Coriander leaves
  • 1 Cup Milk (instead of milk, you can use half and half ½ cup+heavy cream ¼ cup)
  • 2 cups Vegetable Broth
  • 1 Tsp Salt 
  • ½ Tsp Black Pepper
  • A Dash of Cayenne
  • Cheese/olive oil for serving(optional)

Instructions:

  • Turn on the saute mode of the instant pot and heat butter(olive oil to make vegan). 
  • Add onion, garlic, and saute and cook for 2-3 minutes.
  • Now, add celery, coriander leaves, black pepper, salt, a dash of cayenne, and mix well. 
  • Add vegetable broth, deglaze the pot and mix all well(scrape the base of the pot). 
  • Close the lid of the instant pot and place the vent in the sealing position. 
  • Pressure cook on Manual Mode(Hi) for 3 minutes.
  • Natural Pressure Release(NPR) for 5 minutes and then release the remaining pressure manually.
  • Open the lid and submerge the immersion blender into the pot, turn it on low.
  • Blend until the mixture begins to smooth.
  • Turn the speed to high and continue to blend until the desired soup consistency.
  • Turn on the saute mode of the instant pot.
  • Pour milk(you can use coconut/almond milk to make vegan) and stir well. 
  • Cook for a minute or two or until getting the desired consistency. 
  • Taste and adjust pepper and salt if needed.
  • Creamy, soothing Celery Soup is ready to serve, garnish with shredded cheese(to make vegan you can use olive oil) serve with toasted crusty bread or Grilled Cheese Sandwich. Enjoy!!!

  • Refrigerate soup in an airtight container for up to 4-5 days and rewarm gently in the microwave.

To Assemble the meat grinder:

  • Insert the scroll housing in the bracket on the motor.
  • Lock the scroll housing into the position with the unlock button by rotating the button clockwise.

How to Make Methi Paratha

Hello Foodies,

          Methi paratha is an unleavened Indian flatbread made with methi(Fenugreek leaves) and whole wheat flour. A no onion no garlic recipe. It is another excellent variation of paratha where you can include some healthy greens in the paratha. It is especially good for children who are usually not fond of methi leaves or green leafy vegetables.

These methi parathas are made with whole wheat flour, besan, freshly chopped methi (fenugreek) leaves, and some spices. To make the parathas I have not used yogurt which is used in the Gujrati Methi Theplas. I made this paratha for a short trip. Parathas don’t get spoiled easily and are often made for lunch boxes or for 2-3 days journeys. You can have them during any time of the day but usually, they are made for breakfast and also made for kid's lunch boxes too.

This methi paratha tastes so good with Indian chai or you can serve them with yogurt or butter or any pickle or chutney. They also make a good tiffin box snack and stay soft if packed in a foil. The complete recipe will yield 10-12 methi ke parathe.

        Methi is rich in fiber, vitamins, and minerals. Methi paratha is a healthy and flavourful way to start a day. Winters are incomplete without these healthy and flavourful winter warmers. Methi or fenugreek available in plenty during this season gives a good reason to make these yummy, tasty, and filling parathas.

Benefits of a stand mixer to knead the paratha dough:

  • Can do a large batch in a stand mixer effortlessly

How to clean and pluck Methi leaves?

  • Pluck or separate the leaves from the stems.
  • Wash plucked methi leaves 3 to 4 times to remove the dirt and pat dry them using a kitchen towel before chopping.
  • Always chop the methi leaves after washing them thoroughly to preserve the nutrients in them.

Some Other Indian Flatbreads to Try:

Preparation Time: 10 Minutes; Cooking Time: 10 Minutes.
Each Methi Paratha Contains 96 Cal.

Ingredients:

  • Whole Wheat Flour 2 Cups
  • Methi leaves 1 bunch, 100 g
  • Besan ¼ Cup
  • Red Chili Powder 1 Tbsp
  • Turmeric 1 Tsp
  • Salt 1 Tsp
  • Carom Seeds 1 Tsp
  • Kasuri Methi 1 Tsp
  • Oil 2 Tsp+to smear the paratha
  • Water as needed to make the dough

Instructions:

  • Sieve the whole wheat flour and besan(chickpeas flour)(most important step).
  • Clean, wash, and chop fenugreek leaves and keep them aside.

To Knead the Methi Paratha Dough in the KitchenAid Stand Mixer:

  • Use the dough hook attachment of the kitchen aid and keep it ready and set the bowl of the kitchen aid machine in position.
  • In a mixer bowl add whole wheat flour, besan, red chili powder, turmeric, salt, carom seeds, Kasuri methi, chopped fenugreek leaves, and oil 1 tsp.
  • Now, lock the hook knob and start the mixer at speed 2 first.
  • Add water 1 Cup and keep alternating between speed 2 and speed 4 as the dough starts forming.
  • Stop the mixer and scrape the dry flour from the sides of the bowl using a spatula.
  • Start the mixer and add the remaining ¼ cup of water slowly, 2 Tbsp at a time in the bowl. 
  • Now, add oil to make the dough less sticky and keep mixing at low speed until the dough forms and you have a soft and pliable dough.
  • Cover and rest the dough for 10 minutes in a bowl, and after 10 minutes, the dough is ready to make the Methi Parathas.

To Roll, and Roast the Methi Parathas/Theplas:

  • Divide dough into equal portions and roll each portion to make a dough ball. 
  • Now, roll the dough ball into the flour (so that it doesn’t stick to the rolling pin) and roll it gently in a circular motion to form a circular shape.
  • Make it of even thickness from all around.
  • Meanwhile, heat a tawa on medium-high heat.
  • Once the tawa is hot, transfer the paratha on the hot tawa and cook until brown spots appear on the base of the paratha.
  • Flip the paratha and apply oil and cook for 30-35 seconds.
  • Flip again and apply oil on the other side as well. 
  • Press the paratha using a ladle to puff up and roast until it is browned from both sides. 
  • Take out the Methi Paratha and it is ready to serve.
  • Serve Methi Paratha hot with Pickle, Sesame Chutney, Dal-Tadka, and Curd. Enjoy!!!

Tips to Make Methi Parathas:

  • You can add in a little yogurt while making the dough, it will make the Methi Paratha soft.
  • Roll the parathas thin. 
  • Methi or Fenugreek Leaves tend to lose water, so make sure you use less water to make the dough.

          Makar Sankranti is around the corner, and I am sure you are busy in preparation for Bhogi and Sankranti festival. So here are the traditional recipes to celebrate the Festival of Harvest. This year give these delightful and tasty recipes a try and treat your family and friends with this traditional treat.

          In India, the Makar Sankranti festival has its own importance. It is celebrated in various States by different names. This year Makar Sankranti is falling on 14th Jan 2021.

What is Makarsankranti? When this Festival Celebrates?

Makar Sankranti marks the termination of the Winter season and the beginning of a new harvest season. It is dedicated to Lord Sun. It also refers to a specific solar day in the Hindu calendar. On this auspicious day, the sun enters the zodiac sign of Capricorn or Makar which marks the end of winter months and the start of longer days. 

This is the beginning of the month of Magh. From the day of Makar Sankranti, the sun begins its northward journey or Uttarayan journey. Therefore, this festival is also known as “Uttarayan”. Makar Sankranti is the date from which the Northward movement of the sun begins. The period from Karka Sankranti to Makar Sankranti is known as the “Dakshinayan”.
