How to Prepare Peanuts Aamti for fast / दही-शेंगदाण्याची आमटी

            Try our go-to, 7-ingredient yogurt-peanut chutney/aamti made with ingredients you likely have on hand right now. Perfect for sabudana vada, sabudana khichdi, varai rice, or sabudana appe, and more! This Yogurt-Peanut Chutney Recipe can be used as a dipping sauce, salad dressing, for idli and dosa too. 

           This is a simple, no-cook yogurt-peanut chutney recipe. Navratri is around the corner and to celebrate Navratri this simple Maharashtrian dahi-peanut chutney is the perfect condiment. This peanuts aamti can be made on fasting days like Navratri, Ganesh Chaturthi, Mahashivratri, or Ekadashi. Since we are fasting on all nine days, I try to make healthy food which is delicious too.

          The curry is made with roasted peanuts and yogurt and is very easy. Its also called Dahi-Shengdanyachi amti in Marathi where Dahi means Yogurt, Shengdana means Peanuts and Amti means curry. This is my Sister in laws recipe that I followed. Made some changes in the method of preparation and adapted it to suit our taste buds. This protein-rich curry usually accompanies Sabudana Vada, Sabudana Khichdi, or Varai Bhat. Yogurt is used as a souring agent which also aids in digestion.

Ingredients:

  • ½ Cup Peanuts(मुंगफली/शेंगदाणे)
  • ¼ Cup Yogurt(Curd/दही)
  • 5 Strips Green chilies, finely chopped/paste
  • ½ Tsp Cumin seeds
  • Salt to taste
  • 1 Tsp Sugar
  • ½ Cup Water

To Temper the Chutney/Aamti:

  • 1 Tsp Ghee
  • ½ Tsp Cumin Seeds

Instructions:

  • Dry roast the peanuts in a pan on a low flame till golden color, let the peanuts cool, then just rub the peanuts to remove peanuts skin. Or
  • Dry Roast Peanut in the Air Fryer, let the peanuts cool, then just rub the peanuts to remove peanuts skin.
  • Now, in a grinder jar add the peanuts, yogurt, green chilies, salt, sugar, and ½ cup of water and grind to make a smooth paste.

To Temper the Chutney/Aamti:
  • Meanwhile, heat ghee in a pan, once it gets hot add cumin seeds, let it splutter.
  • Now, add the tempering over the dahi-peanuts mixture and stir very well.
  • Tadaa, peanuts amti/chutney is ready to serve, serve it with sabudana vada, sabudana khichdi, varai rice, or sabudana appe. Enjoy!!!

My Take:

  • If amti thickens, then thin it as you like the consistency by adding water.
  • If you don't want to remove peanuts skin, then you can grind them as it is.
  • You can use red chili powder instead of green chilies too.
  • You can double or triple the aamti as you like.
  • You can Air fry peanuts.
  • You can use honey instead of sugar.
  • The yogurt quantity may vary depending on its sourness.

  • Per serving contains 216 calories, 10 g carbohydrates, 2.1 g Dietary Fiber, 12.5 g fats, and 7.5 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
