How to Make Healthy Brown Rice and Brown Lentils in the Pressure Cooker

         Cozy, comfort, and healthy brown rice and lentils my family’s favorite one-pot meal. You won’t miss the meat in this easy to make, Instant Pot Cheesy brown rice and brown Lentils hearty, delicious dish that you can serve as a side dish or as a main course. 

I used brown lentils and to ensure that they would cook through, I soaked them for 5-6 hours. This is the perfect and quick vegetarian recipe that's perfect for Meatless Monday! Hearty lentils and brown rice combine with hearty spices, tangy tomatoes, spicy peppers & yummy cheese! It is so addicting! I eat it right out of the pot before it even gets near the dinner table.

Lentils are a great source of protein and fiber as well as being lower in fat than many types of meat. Along with the health benefits, lentils add flavor and texture to the dish. Chewy and heartier brown lentils make for a great meat substitute. the key to this meal with the spice. I have added hot green chiles, diced tomatoes, and hot taco seasoning to give this dish a kick!

Each Serving of Lentils and Brown Rice Contains 219 Cal.

Ingredients:

  • 1 Cup Brown Rice 
  • ½ Cup Brown lentils/Masoor 
  • ½ Onion (finely chopped)
  • ½ Green Bell Pepper/Capsicum (finely chopped)
  • 3 garlic cloves (minced)
  • 1 can petite diced tomatoes (15 oz.)
  • 1 can dice, green chiles (4 oz.)
  • 1 Tbsp taco seasoning
  • 2 tsp Dried Oregano
  • 1 Tsp Salt
  • ½ Tsp Black pepper
  • 1 Cup Cheese (I used shredded Mozzarella and Cheddar)
  • 2 Tbsp chopped fresh cilantro
  • EV Olive oil 1 Tsp
  • 2 ½ Cups Water/Vegetable broth

Instructions:

  • Soak brown lentils in the water for 5-6 hours.
  • Wash Brown rice under tap water until water runs clear.
  • Turn on the saute mode of the instant pot and heat oil.
  • Add onion, green bell pepper, garlic, and mix well.
  • Now, add brown rice, drained brown lentils, green chile, diced tomatoes with chilies, taco seasoning, oregano, salt and pepper, and mix well.
  • Add 2 ½ cups of water/vegetable broth and stir well.
  • Turn off the saute mode of the instant pot and close the lid.
  • Place the vent on the sealing position.
  • Pressure Cook on Manual Mode(Hi) for 15 minutes.
  • Natural Pressure Release(NPR) for 10 minutes and then release the remaining pressure manually and open the lid.
  • Add half of the cheese and coriander leaves and stir well.
  • Top with the remaining cheese and cover the pot with the lid, and keep covered for 5 minutes.
  • After 5 minutes open the lid and cheesy, healthy Brown Rice, and Lentil is ready to serve. Enjoy!!!
