Pudina rice is one of the most flavourful rice recipes you can cook up in a few minutes. Serving Mint Pulao as accompaniment can put your guests at ease.Many people use mint as a part of appetizers, to be eaten before the main course to digest their food comfortably. The aroma of the mint activates the salivary glands in your mouth, which secrete the digestive enzymes, thereby helping digestion. These attributes are why mint is extensively used in the culinary arts.

- Mint leaves 1 cup
- Coriander leaves ¼ cup,
- Green chilies 5 strips
- Garlic cloves 2
- Ginger 1 inch
- Water ¼ cup
- Olive oil 2 tbsp
- Cumin seeds 1 tsp
- Bay leaf 1
- Black Peppercorn
- Cloves 3
- Cardamom 3 pods
- Cinnamon stick 1 inch
- Cashews 1 tbsp
- Turmeric powder 1 tsp
- Basmati Rice 1 cup, soaked in water for 20 minutes,
- Onion 1 small, thinly sliced
- Tomato 1 small, finely chopped
- Chickpeas ¼ cup, soaked overnight,
- Water 1 ¼ cup
- Salt 1 tsp
To make mint masala paste:
- In a grinder/blender add mint and coriander leaves, garlic, ginger, and green chilies, then add water and grind to make a smooth paste.
- Soak the basmati rice in cold water for 15 to 20 minutes.
- Turn on instant pot and press sauté function, add olive oil and once it gets hot, add the cumin seeds, bay leaf, cinnamon stick, cloves, cardamom pods, black peppercorn, cashews, stir-fry until the cashews turn, golden.
- Now to the pot add sliced onions stir-fry for 2 to 3 minutes, or until the onions start to brown.
- Add chopped tomato, and cook until the tomato begins to break down.
- Now add soaked chickpeas saute well and add turmeric powder, salt and mix all very well.
Meanwhile, add mint and coriander paste and drain the rice and add to the pot, saute well and add 1 ¼ cup of water. - Close the lid, place the vent on sealing position, and cook for 8 minutes at high pressure.
- Naturally, release pressure for 10 minutes, then open the valve to release any remaining pressure, open the lid, mix all, and serve hot.
- Tadaa, aromatic, healthy, and tasty Mint Pulao is ready to serve, serve hot with Raita or curd. Enjoy!!!
- You can add butter or ghee instead of olive oil.
- Stovetop Variation: If you don't have an instant pot, you could also prepare this mint pulao in the stovetop pressure cooker. I suggest two whistles for the rice and let the pressure release naturally.
