Instant Pot Mexican Rice / Arroz Rojo

How to Make Simple, and Easy One Pot Mexican Rice
Hello Foodies,
This Instant Pot Mexican Rice is an excellent example of how the pressure cooker can streamline everyday meals. This bowl of rice is packed with loads of flavor, and using a pressure cooker makes preparation and cooking extremely fast and easy.
This vegan, gluten-free, and healthy Mexican rice is made with the addition of tomato sauce, rice, Mexican seasonings, some spices, beans, and veggies. Most of the ingredients for this recipe can probably be found in your pantry. I have added a finely chopped jalapeno pepper and crushed red pepper flakes for some heat. Don’t worry; lemon juice will balance the heat of jalapeno and chili flakes. Lime/lemon juice makes everything yummier by balancing and bringing out flavors, so never skip adding it while making any Mexican dish. Or for milder rice, omit the jalapeno and chili flakes or replace it with mild or sweet pepper. I have used vegetable broth to make rice, but you can use water or chicken broth in place of the vegetable broth(if you prefer a non-vegetarian version).

The preparation and cooking time total only 11 minutes, but that doesn't include the time it takes to build and release pressure. Allow about 20-25 minutes for pressure buildup and release. This Mexican rice is known for its orange hue and distinctive Mexican flavors. To make fluffy Mexican rice, rinse the rice under water till the water goes clear, then sauté the rice in oil first! Make sure you don't let it get brown. Before it beggings to turn light golden brown, you can add remaining ingredients and mix it well and then pressure cook. So let’s get started.
