How to Make Simple, and Easy One Pot Mexican Rice

This Instant Pot Mexican Rice is an excellent example of how the pressure cooker can streamline everyday meals. This bowl of rice is packed with loads of flavor, and using a pressure cooker makes preparation and cooking extremely fast and easy.
This vegan, gluten-free, and healthy Mexican rice is made with the addition of tomato sauce, rice, Mexican seasonings, some spices, beans, and veggies. Most of the ingredients for this recipe can probably be found in your pantry. I have added a finely chopped jalapeno pepper and crushed red pepper flakes for some heat. Don’t worry; lemon juice will balance the heat of jalapeno and chili flakes.
Lime/lemon juice makes everything yummier by balancing and bringing out flavors, so never skip adding it while making any Mexican dish. Or for milder rice, omit the jalapeno and chili flakes or replace it with mild or sweet pepper. I have used vegetable broth to make rice, but you can use water or chicken broth in place of the vegetable broth(if you prefer a non-vegetarian version). Sometimes I serve Mexican Rice with Jackfruit Salsa.

The preparation and cooking time total only 11 minutes, but that doesn't include the time it takes to build and release pressure. Allow about 20-25 minutes for pressure buildup and release. This Mexican rice is known for its orange hue and distinctive Mexican flavors. To make fluffy Mexican rice, rinse the rice under water till the water goes clear, then sauté the rice in oil first! Make sure you don't let it get brown. Before it beggings to turn light golden brown, you can add remaining ingredients and mix it well and then pressure cook. So let’s get started.
Preparation Time: 5 Minutes; Cooking Time: 10 Minutes.
Ingredients:
- Long Grain Rice 1 Cup
- Tomato Sauce 1 Cup
- Jalapeño 1, chopped
- Black Beans ¼ Cup
- Green Peas ¼ Cup
- Corn ¼ Cup
- Green Pepper ¼ Cup, chopped
- Vegetable Stock 1 ½ Cups
- Lemon juice 2 tbsp
- Coriander leaves for garnishing
- Olive Oil 2 Tsp
Spices:
- Cumin powder 1 Tsp
- Black pepper ½ Tsp
- Red chili flakes ½ Tsp
- Mexican Rice Seasoning 1 Tbsp
- Salt 1 Tsp
Instructions:
- Turn on the saute mode of the instant pot and heat oil.
- Add washed long grain rice and saute for a minute.
- Add Jalapeño, corn, green peas, black beans, tomato sauce, cumin powder, black pepper, red chili flakes, salt, Mexican rice seasoning, and vegetable broth.
- Close the lid and place the vent on the sealing position.
- Pressure Cook on Manual Mode(Hi) for 6 minutes.
- NPR and then open the lid of the instant pot.
- Add lemon juice and green pepper and mix well.
- Cover the instant pot with the glass lid for 5 minutes.
- After 5 minutes, mix well, and Healthy, Vegan, and Tasty Mexican Rice ready to serve. Enjoy!!!

- The calorie count is based on a 2000 calorie diet.
- Per serving contains 230 calories, along with 42 g carbohydrates, 3.2 dietary fiber, 3 g fats, and 5.42 g protein.
- Portion size can always be increased or decreased depending on your health goals and activity level.
