Instant Pot Indian Temple Style Sambar (No Onion-No Garlic, Vegan Recipe)

How To Make Indian Temple Style Sambar in the Instant Pot

         This rich and hearty vegan, vegetarian, and nut-free temple style sambar is the ultimate comfort food. This sambar is a simple fare that is wonderfully warming, soothing, and hearty! If you love simple, easy to make dishes, then you are going to love this sambar. 

This Indian temple style sambar is not only healthy and nutritious for the body, but also tasty to satisfy the taste buds. It's a light, low-calorie appetizing dish. This sambar made using split pigeon peas, vegetables and is perfect for cold nights.

How To Make Temple Style Sambar in Instant Pot 
             We start by adding chopped tomatoes to the instant pot with some oil and sautéing the tomatoes until softened. Then add in cauliflower florets, diced potatoes, chopped eggplants, drumstick pods, Sambar Masala Paste, split pigeon peas(washed), salt, tamarind pulp, and jaggery and saute that with the tomatoes. Then add water and close the lid of the instant pot. Cook on manual mode for 5 minutes. NRP for 10 minutes and then release the remaining pressure manually and open the lid. Stir well, and it's ready to serve. 


How To Serve Temple Style Sambar 
  • You can serve it with rice(Sambar-Bhat)(My personal favorite is instant pot Basmati Rice/ you can cook basmati rice in the Instant Pot along with sambar too). 
  • It also tastes excellent when served with Mashed potatoes. 
  • Taste best when served with steamed idlis. 
  • Also goes well with homemade whole wheat bread/chapati/roti on the side to mop up all that delicious sambar. 

How to Store Sambar
  • Leftovers keep very well in the fridge for 4-5 days. 
  • It is also freezer friendly if you want to freeze the leftovers.

Preparation Time: 5 Minutes; Cooking Time: 15 Minutes.
Each Serving of Sambar Contains 120 Calories. 

Ingredients:
  • Turdal/Split Pigeon Peas / तुरडाळ 100 g
  • Sambar Masala Paste / सांबार मसाला पेस्ट 1 ½ Cup
  • Drumsticks / शेवग्याच्या शेंगा, 8-9 pods
  • Potato / बटाटा 1, chopped
  • Cauliflower / कॉलिफ्लॉवर 1 Cup, florets 
  • Eggplant / Brinjal / वांगी 1 Cup, cubed
  • Tomato / टोमॅटो 1 Cup, diced
  • Tamarind Pulp / चिंचेचा कोळ 2 Tbsp 
  • Jaggery / गुळ 1 Tsp 
  • Salt / मीठ 1/2 Tsp 
  • Oil / तेल 2 Tbsp 
  • Water / पाणी 3 Cups

Instructions:
  • Turn on the saute mode of the instant pot and heat oil. 
  • Add chopped tomatoes and saute and cook for 2 minutes. 
  • Turn off the saute mode of the instant pot. 
  • Add chopped cauliflower, potatoes, eggplants, drumstick pods(I have used frozen drumsticks), sambar masala paste, split pigeon peas, Tamarind, jaggery, and salt. 
  • Mix all well and add 3 cups of water.
  • Close the lid of the instant pot and place the vent on the sealing position. 
  • Cook on manual mode(Hi) for 5 minutes. 
  • NPR for 10 minutes and then release the remaining pressure manually. 
  • Open the lid and mix all well(if needed, add water to adjust the consistency of the sambar). 
  • No onion-no garlic, aromatic temple style sambar masala is ready to serve, serve hot with idli, dosa, or with steamed rice(white/brown). Enjoy!!!

  • The calorie count based on a 2000 calorie diet.
  • Per serving contains 120 calories, along with 16.36 g carbohydrates, 4.3 g dietary fiber, 4.3 g fats, and 5.4 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
