How to Make Vegan Tava Pulao in the Instant Pot

        A popular and authentic Mumbai Street Style Tawa Pulao made with long grain Basmati rice, red chili-garlic paste, and pav bhaji masala in the instant pot. Now you can make this delicious street food at home with simple ingredients that are always available in your kitchen pantry. If you still haven’t tried this pulao, then it’s time to explore the flavors of the unexplored Mumbai Style Tava Pulao.

          It’s a simple dish which can be ready in less than 30 minutes. Works perfectly for those days when you want something quick and easy for lunch or dinner!

 You can prepare red chili and garlic paste 1 or 2 days before and fridge it, whenever need the pulao, just dump veggies, red chili paste, and basmati rice in the instant pot, and your meal is ready in 20 minutes. While serving a squeeze of lemon over it is a must though. Do try this Instant Pot Tawa Pulao recipe and I am sure you will love it.

Why it is called Tawa Pulao? 

         The reason it’s called Tawa pulao is that it is cooked on the big tawa as pav bhaji, including all the rich flavors of the pav bhaji masala and there is a perfect balance of flavors from the masalas and vegetables used. The street vendors cook this rice in a huge tawa(Skillet) on which they also cook Pav Bhaji. If you don’t have a large tawa, you can make this recipe in a kadai too. Since I bought an Instant Pot I started making all pulao in the instant pot.

Ingredients:

To Prepare Red Chili-Garlic Paste:

  • Dried Red Chilies 10-12, seeds and stems removed
  • Garlic 3-4 Cloves
  • Garam Masala 1 Tsp
  • Cumin Powder ½ Tsp
  • Coriander Powder ½ Tsp
  • Salt ½ Tsp
  • Lemon Juice 2 Tbsp
  • Water as needed to grind to make a fine paste

To Prepare Instant Pot Pulao:

  • Basmati Rice 1 ½ Cups
  • Oil 2 Tsp
  • Butter 2 Tbsp(I have used Vegan butter)
  • Cumin Seeds 1 Tsp
  • Onion 1 Small, sliced
  • Ginger-Garlic Paste 1 Tbsp
  • Tomato 1 small, chopped
  • Cabbage 2 Cups 
  • Green Bell Pepper 1 Cup, sliced
  • Green Peas ½  Cup
  • French Beans ½ Cup
  • Salt 1 Tsp
  • Turmeric 1 Tsp
  • Cumin Powder ½ Tsp
  • Coriander Powder ½ Tsp
  • Pav Bhaji Masala 1 Tbsp
  • Coriander Leaves 2 Tbsp, finely chopped
  • Lemon Juice 1 Tbsp
  • Water 2 Cups

Instructions:

To Prepare Dried Red Chili-Garlic Paste:

  • Deseed the dried red chilies and soak them in hot water for 15-20 minutes.
  • Transfer the soaked red chilies, garam masala, coriander powder, cumin powder, lemon juice, and garlic cloves, in a blending jar, and grind into a fine paste. 
  • Adjust the consistency of the chili paste by adding water. 
  • Red chilies and garlic chutney are ready to make tawa pulao.

To Prepare Instant Pot Pulao:

  • Wash and soak the basmati rice in water and keep aside for 30 mins.
  • Turn on the saute mode of the instant pot.
  • Heat the butter and oil and splutter cumin seeds.
  • Add sliced onion and saute and cook for 2-3 minutes or until onions become translucent and light brown color.
  • Add diced tomato and ginger-garlic paste and saute and cook for a minute.
  • Now, add prepared red chili-garlic paste, and mix well.
  • Add cabbage, green pepper, french beans, and green peas and mix well.
  • Add salt, turmeric, cumin-coriander powder, and pav bhaji masala and mix everything well.
  • Drain and add the rice into the pot and give it a quick stir.
  • Add water 2 cups, mix well and deglaze the pot.
  • Close the lid of the instant pot and place the vent in the sealing position.
  • Pressure cook on Manual Mode(Hi) for 6 minutes.
  • NPR(Natural Pressure Release) for 5 minutes and then release the remaining pressure manually.
  • Open the lid and fluff the rice gently.
  • Garnish with coriander leaves and squeeze some lemon juice.
  • Mix well and fiery red Indian Street style Tawa Pulao is ready to serve.
  • Serve Spicy and flavorsome Tava Pulao with Raita. Enjoy!!!

  • Per serving contains 250 calories, along with 43.2 g carbohydrates, 2.2 g dietary fiber, 6.3 g fats, and 5 g protein.
