How to Make Zucchini Potato Casserole in the Instant Pot

          This creamy, cheesy Zucchini-Potato Casserole smeared in the garlic Alfredo sauce and baked in the instant pot. This is an easy side dish recipe that pairs perfectly with just about any family meal! This veggie casserole recipe has simple ingredients, and comes together quickly, and tastes so good!

This zucchini potato bake is creamy and cheesy with a sauce tastes like garlic alfredo. This potato bake has simple ingredients and it comes together quickly. This instant pot zucchini casserole makes a nice substitute for a tossed salad. Serve it with grilled chicken, or fish.

A combination of cheddar and parmesan cheese adds the perfect crisp to the casserole. Fresh herbs add lots of flavors. Fill up a baking dish with layer upon layer of zucchini, potato, cream, and cheese, and this stunner is sure to wow all the crowds this Christmas!

Each serving of Zucchini Potato Casserole Contains 259 cal 

Ingredients:

  • 2 Zucchinis
  • 2 Potatoes (same diameter and size as zucchini)
  • 1 Cup Heavy Cream
  • ½ Cup Parmesan Cheese
  • ½ Tsp Salt
  • 1 Tsp Ground Black Pepper
  • ½ Tsp Oregano
  • 2 Garlic cloves, minced
  • ¼ Cup Green Onion plus more to garnish
  • ¼ Cup Cheddar Cheese

Instructions:

To Make Garlic-Parmesan Sauce:

  • In a medium bowl, stir together heavy cream, parmesan cheese, black pepper, oregano, salt, minced garlic cloves, and green onion.
To Slice and Arrange the Veggies:
  • Thinly slice zucchini into ¼ ”  thick rings. Zucchini should be sliced thicker than potatoes.
  • Peel the potato and thinly slice potatoes into ⅛” thick rings. 
  • Layer the sliced zucchinis and potatoes in the casserole dish(I have used pyrex dish), alternating with zucchini and potatoes. 
  • Pour the prepared cream and cheese sauce evenly over the top. 

To Bake/Cook Zucchini Casserole in the Instant Pot:

  • Turn on the instant pot and pour 2 cups of water into the insert of the instant pot.
  • Place the trivet and the casserole pan over the trivet.
  • Close the lid and place the vent in the sealing position.
  • Pressure cook on Manual Mode(Hi) for 3 minutes.
  • Natural Pressure Release(NPR) for 10 minutes and then release the remaining pressure manually.
  • Open the lid and take the casserole pan out(Zucchini is tender, and potatoes are soft and easily pierced with a fork).
  • Top the baked zucchini and potato with shredded cheddar cheese and some parmesan cheese.
  • Broil for 3-4 minutes to get the bubbly, browned, top, and zucchini is tender.
  • Or you can use an Instant pot lid to brown the top.
  • Garnish with green onion and herbs, if desired, and serve. Enjoy!!!

  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 259 calories, along with 14.8 g carbohydrates, 2.3 g dietary fiber, 17.4 g fats, and 11.6 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.

Tips to make Zucchini-Potato Casserole:

  • Cooking time may vary depending on how thick you sliced the potatoes.
  • You can use Half & Half in place of Heavy Cream and use Low Fat Shredded Cheddar Cheese too.
  • To lift out a perfect, intact square, you will need to let the casserole cool for about 10-15 minutes.
  • For softer zucchini, cut thinner.
  • Leftovers can be refrigerated for up to 2 days and reheated in a microwave.
