Easy and Simple Veg.Thali Ready in 30 Minutes

          When it comes to the thali(Indian Platter), I first wonder, from which dish should I start, and I always go to the sweet dish first.             Last but not least, this vegan, drool-worthy Indian carrot halwa is light and tasty. It is excellent as a dessert to eat after any meal. This Halwa is authentic, juicy, and flavourful. It can be made over the stovetop, but I found, making of carrot halwa in an instant pot is as the easiest way. Addition of coconut milk makes it more creamy and Rich. This is a vegan and gluten-free version of carrot Halwa.

Indian Flatbread Chapati:
             I am growing up by eating this healthy, and soft whole wheat flour flatbread that made using two main ingredients. That being said, the feel and taste of a homemade fresh Chapati are a delight from the store-bought. So, if you have extra time, and you like playing with dough, give them a try. 



But if you are in a hurry then don't spend too much time in kneading the dough, use my simple tips and tricks to make dough pliable, smooth, and easy to roll. First, add water to the flour and bring all together to make the dough. Then cover the dough with a damp cloth and let it sit for 15 Minutes. After 15  apply some oil and knead the dough. So relaxing the gluten helps make the dough pliable and produces a better produce and cooking process. Chapatis are most often served with stews, vegetables, meats or and sometimes eaten on its own. Let's get started!
Ingredients:
  • Whole wheat flour 2 Cups
  • Salt ½ Tsp
  • Oil 2 Tsp
  • Water to knead the dough.



Instructions:
To Prepare Dough:
  • In a bowl sieve whole wheat flour and add salt and mix well.
  • Add water and knead to make a soft dough and cover with a damp cloth and keep it aside for 10-15 Minutes.
  • After 15 Minutes apply some oil and again knead the dough for a couple of minutes.



To Prepare Chapati/ Flatbread:
  • Divide the dough into equal parts and roll one dough ball into 2-3" circle.
  • Apply some oil and sprinkle some flour and fold it into half.
  • Again apply oil, sprinkle flour and fold it.
  • Sprinkle some flour on the floor and using a rolling pin roll the dough in a big circle or chapati.
  • Heat tawa and transfer the chapati and roast chapati from both the side by applying oil.
  • soft, flaky chapati is ready to serve, serve hot with Indian curry.  

Boondi ka Raita:
           A delicious accompaniment made using curd and deep-fried crispy small pearls of chickpeas flour. When added in curd, these soak up the liquid and becomes soft and yummy.



Ingredients:
  • Curd/Yogurt ½ cup
  • Boondi ¼ cup
  • Milk ¼ Cup
  • Red chili powder ½ Tsp
  • Cumin Powder ½ Tsp
  • Fennel powder ¼ Tsp
  • Salt ½ Tsp
Instructions:
          In a bowl whisk the curd till smooth and add milk, boondi, red chili powder, cumin
powder, fennel powder and salt and mix well. Transfer the boondi ka raita in a serving
bowl and serve chilled.
