Rajgira Puri Thali: Ekadashi Special Thali

             On this auspicious occasion of Devshayani Aashadhi Ekadashi, try making these crispy, tasty rajgira poori, potato curry, and potato stir fry. This plate full of fasting food is super delicious on that you can gorge on this Aashadhi Ekadashi. During fasting, we do not eat regular meals, but we end up consuming more calories than a regular day😜(it's like एकादशी आणि दुप्पट खाशी). 


We love and enjoy all the treats that are allowed on a day of fasting. So I made this rajgira poori, potato curry for fast and, spicy and crispy potato stir fry. These are filling and will give you energy for the day while you are on fast/vrat/upvas. During any Indian fasting or upvas, tuber veggies are allowed, so made this potato curry and potato stir fry. This Thali is not restricted to make only in fasting day; you can make on regular days too. It's totally vegan, gluten-free diet.

Ashadhi Ekadashi Celebration
             This year the Aashadhi Ekadashi is observed on July 12th in Maharashtra, and Devshayani Ekadashi is also known as Aashadhi Ekadashi in Maharashtra. On this day people keep fast, and during fast/vrat, you are not supposed to eat regular meals. So food for fast is different than a regular one, and so recipes are also different(So guys, If you are new to this Indian fasting/vrat diet, don't get confused with the actual fasting diet). This Ekadashi is also known as Mahaekadashi and Shayani Ekadashi because on this day Lord Vishnu falls asleep to wake up four months later on Prabodhini Ekadashi in the Kartik Month and this period is known as 'Chaturmas.' Also on this day people(in huge professions) go walking to Pandharpur to see their God Vitthal. This Paywari(rally) starts in Alandi and ends at Pandharpur. 

Preparation Time: 10 Minutes; Cooking Time:15 Minutes.
Each Rajgira Poori Contains 78 Calories.


Ingredients:
  • Rajgira flour(Amaranth flour) 1 Cup
  • Potato 2 small, boiled and mashed 
  • Green chilies 5 strips, paste
  • Peanuts 2 Tbsp (dry roasted, grounded)
  • Cumin seeds 1 Tsp
  • Coriander leaves 2 Tbsp, Chopped
  • Salt 1 Tsp
  • Oil for frying Puris


Instructions:
To Prepare Dough for Rajgira Poori:
  • In a bowl, add rajgira flour, mashed potatoes, peanuts powder, salt, cumin seeds, ginger-green chili paste, and cilantro and mix well.
  • Knead to make a soft dough(add water if needed).
  • Cover the dough and let it rest for 15 minutes.




To Roll the Poori:
  • Cut the plastic bag, and grease it with a little bit of oil(you can use parchment paper too).
  • Divide the dough into equal portions, place the one dough ball on the plastic bag or parchment paper. 
  • Spread the dough on the plastic or parchment paper using a rolling pin, or you can spread dough ball using fingers(If dough sticks to your fingers, add oil and spread dough in a circular shape).
  • Or divide the dough into equal portions and roll out small circles. 
  • Or you can roll out a big circle and with the help of cutter or bowl cut puris(small circle) from the big circle.



To Fry Pooris:
  • Meanwhile, turn on the flame and heat oil for frying the puris, once oil is sufficiently hot, gently slide puri in oil.
  • Press down the puri very gently to make it fluffy, flip the puri and fry until it gets a golden brown color from both sides.
  • Place the fried poori over a plate covered with a kitchen towel, and similarly fry rest of the puris as well.
  • Here, crispy and tasty rajgira puris are ready to serve. Serve hot with potato curry, potato stir fry, or with yogurt. Enjoy!!!
My Take:
  • If you don't want to make puri, you can also make paratha out of this dough.
  • These Puris are difficult to roll as it gets stuck on board, so use plastic or parchment paper(as shown in the video) to roll the puri.
  • Knead dough without water.
Dietary Comment :
  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 78 calories, along with 7.63 g carbohydrates, 1 g dietary fiber, 4.78 g fats, and 2 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.

            It is good to eat rajgira puri for breakfast, lunch, brunch, or dinner.
