This potato stir fry recipe is for stir fry lovers! This Ashadhi Ekadashi try easy peasy potato stir fry made with less oil. I simply love stir fry recipes because not only is it easy and healthy, but also a great way to use up leftover veggies. And this yummy, stir fry, crispy and carby potatoes are one of my favorite comfort foods during fasting days (Indian fast/vrat). It is also versatile as most of the potato recipes are, so here it is.
This potato stir fry is a healthy, vegan, and gluten-free twist on your fasting day food platter. Top it with some chilled homemade curd/yogurt or go vegan and top it with some creamy coconut milk. Either way, it is a healthy and totally addictive breakfast or lunch recipe that is super easy to make. Fasting days or any other days potato is a delight to savor and to serve. Let's get started!

Preparation and Cooking Time: 5 Minutes.
Each Serving of potato Curry contains 87 Cal.
Ingredients:
- Potato 2 small, boiled and chopped
- Peanuts powder, 2 Tbsp (dry roasted peanuts)
- Red chili powder 1 Tsp
- Salt ½ Tsp
- Coriander leaves 2 Tbsp, chopped
- Cumin seeds 1 Tsp
- Veg.oil 2 Tsp
- Heat oil in a pan and splutter cumin seeds.
- Add potatoes and fry for a minute.
- Add red chili powder, salt, peanuts powder, and coriander leaves and mix well and Cook for 2-3 minutes.
- Here, the tasty potato fry is ready to serve, serve hot with rajgira puri. Enjoy!!!
