This incredibly tasty Shahi Chicken Korma made for our special guests, and they were so in love with this delicious korma. It's a long weekend here in USA(4th of July), and some of our friends came over to our place, and they wanted meat dish as a main course, something different, comforting and creamy- spicy Indian food.
This divine combination of chicken, cashews, and a creamy white sauce is so tasty. Using an instant pot, this is effortless and easy to make, and although it does have a long ingredient list. Traditionally this made in a white sauce and garnished with a thin silver sheet known as vark. This Royal dish Korma is so fragrant, mildly spiced, with that perfect heat from the curry aftertaste. It also has a subtle sweetness and that perfect spiciness needed.

Why was it name given Shahi Chicken Korma?
Shahi means Royal, and this royal dish has its origin in the Mughal Cuisine. This cuisine is rich, spicy, fragrance and so famous among foodies and it's our absolute favorite. Mughal kitchen offers the best and wide variety of Korma (Vegetarian and Non-vegetarian), Biryanis, Kebabs dishes. This rich and creamy Shahi Chicken Korma are one of the traditional recipes from Mughal Cuisine. Everything about this dish is so Royal and just appealing to serve to guests and your loved ones. This Royal Korma can be made with meat or vegetables; here I have cooked the korma using chicken. Also, I have posted vegetable korma in instant pot recipe.
How to Prepare Shahi Chicken Korma
Marinade chicken pieces with yogurt, ginger-garlic paste, green chilies, salt, and lemon juice. Make a smooth puree of onions and cashews separately using a ¼ cup of water and keep aside. Turn on sauté mode of the instant pot and heat oil and roast whole spices. Sauté onion, ginger garlic paste and green chilies for 2-3 minutes or until the raw smell of onion are gone. Add marinated chicken, garam masala, salt, ghee, milk and water and sauté and cook for 2-3 minutes. Pressure cook for 7 minutes with the vent on a position, then quick release pressure. Stir in cashew paste, cream. Garnish with dried fenugreek leaves(you can add raisins to garnish and stir in a tablespoon of honey, it's optional). Enjoy with rice, chapati or naan.
Prep Time: 10 Minutes; Cook Time: 30 Minutes.
Marinate for 15 Minutes.
Each Serving of Shahi Chicken Korma Contains 444 cal.
Ingredients :
To Marinate Chicken:
- Chicken 1 pound(approx. 450 g)
- Yogurt ½ Cup
- Green Chillies 3 strips, finely chopped
- Lemon Juice 1 Tbsp
- Ginger-Garlic Paste ½ Tbsp
- Salt ½ Tsp
To Cook Chicken Korma in Instant Pot:
- Green chili paste, 3 strips
- Ginger-garlic paste ½ tbsp
- Onion paste/puree, 2 small
- Cashew nuts paste, 10 - 15 cashews
- Garam masala 1 tsp
- Salt 1/2 Tsp
- Milk cream 2 tbsp
- Milk ¼ cup
- Water 1 cup
Whole Spices:
- Cumin Seeds 1 Tsp
- Cinnamon ½ inch, stick
- Bay leaf 1
- Black peppercorns 6-7
- Cloves, 3 pods
- Cardamom, 3 pods
- Kasuri Methi for garnishing (optional)
- Veg.oil 2 tbsp
- Ghee 1 Tbsp
Instructions:
To Marinate Chicken:
- In a bowl add yogurt, ginger-garlic paste, green chilies, salt, and lemon juice and mix well.
- Add chicken and mix well, cover and keep aside to marinate for 15 minutes.
To Prepare Shahi Chicken Korma in Instant Pot:
- Turn on saute mode of the Instant pot and heat oil.
- Add cumin seeds, black pepper, cloves, cinnamon, cardamom, and bay leaf and let it splutter.
- Now, add boiled onion paste, green chilies, and ginger-garlic paste and sauté and cook for about 2-3 minutes.
- Add garam masala, salt, and marinated chicken to the instant pot, mix all well and saute for 2 to 3 minutes.
- Add ghee 1 Tbsp, milk ¼ cup and water 1 cup and mix all well.
- Close the lid and place the vent on sealing position.
- Cook on Manual Mode(Hi) for 7 minutes and then release the pressure manually.
- Open the lid and add cashew paste, milk cream and if needed, add water to get the desired consistency.
- Garnish with kasuri methi and creamy and delightful Shahi Chicken Korma is ready to serve, serve hot with rotis, chapatis, naan or with rice. Enjoy!!!
My Take:
- You can add more green chilies if you want your korma spicier.
- You can add raisins to garnish, and it can add sweetness to the korma.

- The calorie count is based on a 2000 calorie diet.
- Per serving contains 444 calories, along with 18 g carbohydrates, 2 g dietary fiber, 26.8 g fats, and 34.02 g protein.
- Portion size can always be increased or decreased depending on your health goals and activity level.
