How to Make Christmas Coconut Ice Bars / Vegan Coconut Bars(Vadi/Chikki) 
Hello Foodies,
         It's a festive time, serve your friends and family, this coconut ice bars. It's sweet, soft,

vegan and ready in just 15 minutes. These gooey Coconut ice bars will be devoured straight from the pan in no time. Sometimes to prepare this coconut ice bar honey gelatin is also used as an ingredient. There are many different recipes to prepare coconut ice, here I am sharing my own version to prepare vegan coconut ice recipe. 


         These are unique sweet prepared for the Christmas celebration, and they are the most popular in the Goan region. They are a traditional part of a sweets plate or to give to friends and neighbors. The addition of cashew powder makes the coconut Ice cook fast, and the mixture will actually leave the sides of the pan. So let's start!


Preparation and Cooking Time: 15 Minutes.
Each coconut ice bar contains 80 Calories.

Ingredients:

  • Desiccated Coconut 2 ½ cups (162 g)
  • Icing Sugar / Confectioners sugar / Powdered Sugar 1 ½ cup
  • Coconut milk 1 ½  cup
  • Cashew powder 30 g
  • Cream of tartar ¼ tsp(optional)
  • Vanilla extract ½ tsp
  • Coconut oil 2 Tsp
  • Blue food color 2-3 drops

Instructions:

  • In a pan add coconut oil, coconut milk, desiccated coconut, cream of tartar and icing sugar.
  • Mix all and cook on medium flame, tor 2-3 minutes.
  • Now add cashew flour and vanilla extract and continue to cook until the mixture becomes thick and begins to leave the sides of the pan.
  • Add 2 drops of blue food color and mix well.
  • Pour it immediately to coconut oil greased pan and spread with the spatula evenly.
  • Score the diamond or square shapes with the knife and let it set for 15-20 minutes.
  • Or leave it outside to set for overnight till it is firmly set and cooled.
  • After 15 minutes cut into pieces and coconut ice is ready to serve. Enjoy!!!

My Take:
  • You may add the food color of your choice or may prepare it in two different colors.
  • You can add coconut concentration 3-4 drops.
  • It is better to use the Coconut Ice within a week of making.
  • If refrigerated, it stays well for 10 – 12 days.

Dietary Comments:

  • It makes 30 servings. And based on a 2000 calorie diet, per serving contains 80 calories, along with 7.22 g carbohydrates, 6 g fats, and app.1 g protein.

Good Time To Eat:
           It is good to eat Coconut Ice as a dessert or snacks.

  1. These are so adorable. We used to make something similar when I was younger but with condensed milk. They would disappear in no time! Love that this is dairy free. Cashew powder would be ground cashew nuts?
