Laxmi Narayan Style Chivda: Diwali Special

        Have you ever tasted this crispy and crunchy Laxmi Narayan Style Chivda / Dagdi Pohe

Chivda? This is my all-time favorite chivda / snacks. Laxminarayan Chiwda is a famous Indian snack mix that consists of a variable mixture of spicy dried ingredients, such as fried lentils, peanuts, corn, vegetable oil, chickpeas, flaked rice, cashews, almonds, raisins. This is all flavored with salt and a blend of spices that may include coriander and cumin, sesame seeds. Laxminarayan Chiwda is famous among Punekars for producing savories such as peanuts, rice flakes, and authentic spices.

Ingredients :

  1. Dagdi Poha / flaked rice / flattened rice 3 cups
  2. Peanuts ½ cup
  3. Coconut ¼ cup, sliced
  4. Raisins ¼ cup
  5. Cashew nuts ¼ cup
  6. Almonds ¼
  7. Chana dal ¼ cup
  8. Red chili powder 1 Tbsp
  9. Turmeric powder 1 Tsp
  10. Coriander powder 1 Tsp
  11. Cumin Powder 1 Tsp
  12. Asafoetida ¼ Tsp
  13. Sesame seeds 1 tbsp
  14. Fennel seeds 1 tbsp
  15. Powdered sugar 1 tbsp
  16. Salt 1 Tsp
  17. Veg. Oil for frying

Instructions :

  1. To Prepare Chivda Masala:
    1. In a grinder add red
      chili powder, turmeric powder, coriander powder, cumin powder, asafoetida, sesame seeds, fennel seeds, salt and grind to make a coarse powder.
  2. To Prepare Chivda:
    1. Heat oil in a pan and fry poha in small batches by using fine sieve ladle till they become crispy.
    2. Now fry peanuts,
      cashews, raisins, chana dal, coconut,  till they become crispy and crunchy.
    3. Now in a pan heat 2 Tbsp oil and add prepared masala and pour masala over fried poha and mix well.
    4. Now add fried nuts and powdered sugar and mix all well.
    5. Let them cool down and
      then store in an airtight container.
    6. Tadaa, crispy and crunchy chivda ready to serve. Enjoy!!!

Dietary Comment:

It makes 15 servings. And based on a 2000 calorie diet. Per serving contains 260 calories, along with carbohydrates - 18 g, dietary fibers - 2.93 g, fats - 19.53 g, proteins - 5.2g.
