How to Make Paneer Khurchan

The word Khurchan means the spices that stick to the bottom which are to be scraped off. This curry tastes tangy, creamy and yummy made with butter, tomato puree, bell pepper and by using basic spices. Paneer Khurchan is a Punjabi recipe taste superb with naan and tandoori roti.
Preparation Time: 15 Minutes; Cooking Time: 20 Minutes ;
Total Time: 35 Minutes.
Ingredients :
- Paneer 100 g, grated.
- Onion 2 small, chopped
- Tomato 2 small, puree
- Red pepper ½, chopped
- Cumin seeds 1 tsp
- Butter 2 tbsp
- Turmeric powder 1 tsp
- Garlic 3 cloves, paste
- Ginger 11 g, paste
- Coriander ¼ cup
- Chilli powder 1 tbsp
- Salt 1 tsp
- Garam masala 2 tsp
- Green chili 5 strips
Instructions:
- In a thick-bottomed kadai heat 2 tbsp butter, add cumin seeds. When they begin to change color, add chopped onions, saute it well and cover and cook for 5 to 6 minutes, saute in between.
- Now, add ginger - garlic paste, turmeric powder, salt, red chili powder, garam masala, and chopped red pepper and saute for about 2 to 3 minutes, then add tomato puree and saute and cover for another 4 to 5 minutes.
- Add the grated paneer, mix and saute for more 5 to 6 minutes or till the paneer begins to stick to the pan. Switch off the flame and remove it into a bowl and garnish with coriander ( If you want then you can add 2 tbsp cream or 2 tbsp butter too). It tastes superb with tandoori roti, naan or kulcha. It also goes good with paratha, chapatti or rice too.
