How to Make Mawa Gujiya(Khavyachi Karanji)in Air Fryr

          Mawa gujiya is an integral part and is the most favorite Holi special Indian delicacy. As Holi is around the corner. I am introducing my no sugar-no deep-fried, healthy mawa gujiya version. This festive favorite is cooked in various avatars. This air fryer mawa gujiya is the flavor of the season and is crispy from the outside and yummy inside. 


This gujiya is a dream come true for all the weight watchers and health fanatics. Don't forget to add this sweet into your Holi special menu. If served during Holi your near and dear ones will enjoy the delicacy guilt-free. This mawa gujiya is mostly famous in the northern parts of India. The magical taste of the combination of mawa, dry nuts, and coconut. So this Holi eats a healthy trend!
          Holi, the festival of Color, or the celebration of Love and Joy, signifies the arrival of spring, the end of winter, and the victory of good over evil. Also, we can say it is celebrated as a thanksgiving for a good harvest. On this day people meet family, friends to throw colors on each other, play drums and music, sing and dance, and then share Holi delicacies, drink(bhang made from cannabis), and food. Holi is also the time to savor tasty food and exchanging sweets and gifts. Food is integral to every festival in India.

           These easy mawa gujiya are made with my homemade khoya/mawa stuffing, and all-purpose flour dough is fried in the air fryer that ready in minutes (only takes 10 minutes to cook). We love gujiya in my house, but deep frying things kept me away from 
making and eating. But since I have prepared it in an air fryer, I started to make it at least once in 3-4 months. Tried them in the air fryer and they turned out perfect, golden, crispy, and flaky on the outside, and yummy on the inside with no oil!

            So, while you prepare yourself to enjoy this Holi with colors, then don't forget to make this Mawa gujiya to make this festival even more special.

Preparation Time: 20 Minutes; Cooking Time: 10 Minutes.
Each Mawa Gujiya Contains 110 Calories.

Ingredients:

To Prepare Dough:
  • All-Purpose Flour / Maida 1 Cup
  • Ghee/clarified butter 2 Tsp (melted)
  • Salt 1 pinch
  • Milk powder 1 Tbsp (optional)
  • Water/Milk to knead the dough
To Prepare Stuffing for Gujiya:
  • Khoya/Mawa 1 Cup
  • Desiccated Coconut ¼ Cup
  • Jaggery/Sugar ¼ Cup
  • Sesame Seeds 2 Tbsp, dry roasted
  • Dry nuts 3 Tbsp, Chopped
  • Cardamom Powder 1 Tsp
  • Cooking oil Spray
Instructions:

To Prepare the Dough:

  • In a mixing bowl add all-purpose flour, salt, milk powder, and melted ghee(Moyen) and rub with your palms.
  • Now, knead a soft dough using water and cover, and keep aside.

To Prepare Stuffing:

  • Dry roast coconut and sesame seeds for 2-3 minutes and keep aside.
  • Grind dry roasted sesame seeds and keep them aside.
  • Break the khoya and cook in a pan on medium to low flame for 2-3 minutes.
  • Now, in a bowl add mawa, coconut, sesame seeds, dry nuts, cardamom powder, and jaggery and mix all well. Mawa stuffing is ready.

To Prepare Gujiya/Karanji:

  • Take a prepared dough and knead for a minute and divide it into equal portions.
  • Divide the dough into equal parts and roll each disc into a 2.5” - 3” circle and put 1 Tbsp khoya stuffing in the center. 
  • Apply some milk on the edges using your finger and then fold the circle over to form a semicircle with the edges sealing the filling inside.
  • Once the gujiya is sealed firmly, using a designer knife makes designs or using a fork press the ends to form a nice pattern or the edges can also be folded into small pleats.
  • Place the filled gujiyas onto a wet towel to avoid drying.
To Air Fry Gujiya / Karanji:

  • Preheat air fryer at 360 F for 5 minutes.
  • Spray the air fryer pan/basket with the cooking oil spray.
  • Place 4 prepared dumplings into the greased pan.
  • Air fry from both sides for 10 minutes or until golden(flip them after 5 minutes).
  • Remove from air fryer and repeat with remaining gujiyas.
  • Tadaa, crispy outside, yet moist and yummy Gujiya/ Karanjis are ready to serve. Enjoy!!!

To Bake Gujiya in the Oven:

  • Preheat oven to 400 F.
  • Bake on a baking pan for 15-16 minutes or until golden.

To Deep Frying Gujiya:

  • Heat oil in a kadhai and fry the gujiyas on low flame till golden brown. 
  • Remove the paper towel and let them cool down and store them in an airtight container. 

My Take:

  • The addition of milk powder makes gujiya very crispy and melts in the mouth.
  • If the dough is too soft, then add more flour and If the dough is too stiff, add milk or water and knead to make a soft dough.
  • They remain good for at least one week at room temperature and 2 weeks in the fridge.
  • But keeping them in the fridge makes them chewy.
    You can totally substitute all-purpose flour by using whole wheat flour.

Dietary Comments:

  • Given measurements makes 18 servings.
  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 110 calories, along with 13 g carbohydrates, 6.18 g fats, and 3.27 g protein.
