How to Make Indian Style Masala Pasta / Desi Style One Pot Masala Pasta

Weekends are made for pasta, pizza, and all the junky food and when I crave hearty comfort food, that satisfies my taste buds, I make this delicious Indian Masala pasta dish. So gave a delicious, savory spin to regular cheesy pasta and made Indian Style Pasta.
One of the greatest things about an instant pot is how easy it makes things with no fuss. This Instant Pot Indian Vegetarian, Vegan Masala Pasta has just a 6 minutes cook time. It really is that easy. There are no limits or rules for making this instant pot Indian Masala Pasta. You can totally add veggies that you have in your fridge. The addition of veggies makes the pasta more wholesome and nutritious. This is no cheese, no meat, vegan pasta recipe.

Tips To Make Masala Pasta:
- You can add your choice of veggies in the pasta. French beans, broccoli, mushrooms, cauliflower or cabbage goes well too.
- I have used Rotini pasta shells you can use any variety of your choice(Like Macaroni, Penne, Spaghetti, and many more).
- The spice powders can be adjusted to your taste preference.
- I have used whole wheat penne pasta. You can also use macaroni or other pasta varieties.
- Serve the masala pasta hot or warm as a snack or brunch or light dinner.
- While serving top the pasta with parmesan cheese or some grated cheddar cheese if you like.

Ingredients:
- Rotini Pasta 8 oz
- Onion 1, chopped
- Tomato 1, chopped
- Green Pepper ½, Sliced
- Green peas 1/4 Cup
- Carrots 1/2 Cup
- Corn 1/4 Cup
- Green chilies 2-3 strips, finely chopped(you may use 1 Jalapeno, deseeded)
- Ginger-garlic paste 1 Tbsp
- Red chili powder 1 Tbsp
- Garam Masala ½ Tsp
- Black Pepper ¼ Tsp
- Maggie Masala 1 Tbsp(Optional)
- Ketchup/Red Chilli Sauce 2 Tbsp
- Salt 1 Tsp
- Oil 2 Tbsp
- Water 3 Cups
Instructions:
- Turn on the saute mode of the instant pot and heat oil.
- Add ginger-garlic paste, green chilies, and onion.
- Saute and cook for 2-3 minutes and add tomatoes and green pepper and stir well.
- Add carrots, green peas, corn, red chili powder, garam masala, salt, black pepper, Maggie masala, ketchup, and rotini pasta and mix well.
- Now add water and give it a quick stir, close the lid and place the vent on the sealing position.
- Cook on Manual Mode(Hi) for 6 minutes and then Quick Release.
- Mix well and Indian Masala Pasta is ready to serve. Enjoy!!!
