How to Make Perfect Pressure Cooker / Instant Pot Cheesecake

Hello Foodies,
       Looking for the perfect cheesecake recipe for the Christmas party? Then this is the ideal and full proof instant pot cheesecake recipe for the perfect ending to fall and winter holiday dinners! It is a no-bake version of cheesecake in a jar made with fresh oranges. These can be a delicious treat for any time. I am a cheesecake person at heart; every time we went to the cheesecake factory, I tried different flavored cheesecakes. 


So, if you put in front of me many desserts and there is cheesecake, I will reach for it, no doubts here. This Pressure Cooker Cheesecake has completely changed my perception of how this cake can be made. It has a rich, creamy taste, and I used fresh orange juice to get the perfect flavor. I have made several variations on this basic recipe, and everyone asks me to make it over and over again. Oranges are flooding in the market these days, gorgeous and fragrant ones that are just perfect for making instant pot cheesecake in jars.


Other versions of instant pot cheesecakes I will be sharing with you soon. I have used orange cream biscuits as a crust, which is a wonderful part of the recipe. But you can totally replace them with your favorite crackers. It was the most creamy, best-tasting cheesecake.

Why I Like Instant Pot to make cheesecake 
  • Making an Instant Pot Cheesecake is just like making a regular cheesecake until you get to the cooking part. And to be honest, I think Instant Pot Cheesecake is actually more comfortable because you don't have to mess with a water bath because the Instant Pot creates a water bath for you. 
  • You'll also need mason jars to make cheesecake. I have been using Ball Mason jars to make desserts in instant pot, and so far, it's doing best!

Why should you add cornstarch to a cheesecake?
  • Usually, cornstarch is added to the cake batter to avoid cracks. About one tablespoon to 1/4 cup of cornstarch (depends on how much batter you have) is added to the batter.

How long orange cheesecake lasts
           You can prepare the cheesecake up to three days before you plan to serve it. Keep it in the jar, covered, and refrigerated until you plan to serve. Wait to add the topping until serving. Leftovers will keep in the fridge for about five days.


The texture of the Instant Pot Orange Cheesecake 
  • Smooth, thick and creamy texture with a sweet orange cookie crumbles crust. 

Preparation Time: 15 Minutes; Cooking Time: 12 Minutes. 
Each Serving Contains 340 Calories. 

Ingredients:
To Make Crust:
  • Orange Cream Biscuits 1 packet
  • Unsalted Butter 2 Tbsp, melted

To Prepare Cheesecake Batter:
  • Philadelphia cream cheese 8 oz
  • Heavy whipping cream 1 Cup
  • Sour cream 1/2  Cup
  • Cornstarch ¼ Cup
  • Condensed Milk ½ Cup
  • Orange juice 2 Tbsp + Extract ½ Tsp 
  • Orange Food color(Optional) 
For Toppings:
  • Butter Cream/Whipping Cream Frosting
  • Orange slices
  • Mint leaves 
Instructions:
  • Take out all the ingredients from the fridge for at least an hour.
To Make the Crust:
  • Grind orange cream biscuits and butter
  • Crush and mix well. Keep it aside.

To Prepare Cheesecake Batter:
  • Place the room temperature cream cheese in a KitchenAid mixer and mix until smooth(mix at low speed). 
  • Add all the remaining ingredients(sour cream, cornstarch, condensed milk, orange juice + extract, and heavy whipping cream and mix the mixture until well combined, smooth and creamy(do not over mix). 
  • Scrape down the sides of the bowl during mixing. 
  • Add a few drops of orange food color and mix well and once done, keep it aside.

To fill the Jars:
  • Take a Mason Jars and add 1-2 tbsp of prepared crust mixture in each jar. 
  • Press the mixture into the bottom of the mason jars with the spoon. 
  • Pour the prepared orange cheesecake mixture on top of the crust, just fill about ¾ of jars. 
  • Tap on a palm or on the floor to get rid of any air bubbles. 
  • Cover the Mason jars with aluminum foil.

To Prepare Orange Cheesecake in the Instant Pot:
  • Add 2 cups of water into the instant pot. 
  • Place the trivet and the mason jars. 
  • Cover the Instant pot with the lid and place the vent on the sealing position.
  • Pressure cook on manual mode(Hi) for 12 minutes. 
  • NPR and then open the lid. 
  • Take out the mason jars and remove the aluminum foil. 
  • Let it cool for half an hour and refrigerate it for at least 2-3 hours.
  • After 2 hours, it's ready to serve, top it with buttercream or whipped cream frosting and garnish with orange slices and mint leaves. Enjoy!!!

  • Per serving contains 340 calories, along with 34.8 g carbohydrates, 22.6 g fats, and 4.7 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
