How to Make Halwai Style Balushahi With Tips and Tricks | Balushahi | बालुशाही

Hello Foodies, 
         On this auspicious occasion of Tulsi Vivah, I have prepared this Balushahi as an offering for the tulsi puja. This rich and delectable balushahi is a great way to enjoy the festive treat. Sharing a quintessential Indian classic holiday dessert, which is flaky, crispy, sweet, and very addictive. Pure Heaven!

           Balushahi is a sugar-glazed deep-fried flaky dessert. It has a flaky texture that crumbles and a melt in mouth delicacy. Balushahi is also known as Badusha. It looks similar to a glazed doughnut, also known as Indian Doughnuts, but it tastes different and has a different texture than glazed doughnuts. But the doughnut has a light and fluffy texture, and balushahi has a soft and flaky texture. Making balushahi at home is not difficult. 

  
          This Balushahi recipe is a tried recipe, and by following this recipe, you will make exactly like the ones you get in the Halwai/Mithai shop. This recipe yields a perfect, sweet, crispy outside and soft and flaky from inside. So follow the exact measurements and instructions given below, and you will be happy with the outcome.

About the Tulsi Vivah:
          Tulsi Vivah falls on the Prabodhini Ekadashi or the eleventh day of Kartik month. Tulsi vivah celebrates on the eleventh day of Diwali. This day Tulsi is dressed with a beautiful saree, and Indian ornaments/jewelry, and decorated as a bride. It is a mythical marriage of Shri Krishna, with the tulsi plant. On this occasion, a special vegetarian meal is prepared for this occasion. The prepared food is then kept aside for bhog after the completion of marriage rituals. 

Tips and Tricks to Make Halwai Style Balushahi:
  • Use the chilled water for kneading the dough. 
  • The most important step is, fry balushahi on low flame so that it will cook nicely from inside. 
  • While frying balushahi, fry in batches. Don't overload the pan. 
  • Keep covered the remaining rolled dough with the cloth, until they are ready to fry. 
  • Sugar syrup should be of a one string consistency; otherwise, balushahi will not glaze well and will not taste sweet like Halwai. 
  • Do not over knead the dough. 
  • If sugar syrup is getting cooled while dipping the balushahi, then reheat sugar syrup(if needed, add 2-3 Tbsp).

Ingredients:
To Prepare the Dough:
  • Maida / Apf 2 Cups 250 g
  • Baking Powder ½ Tsp 
  • Baking soda one pinch
  • Salt ¼ tsp
  • Ghee - ¼ cup(60 ml) 
  • Yogurt ¼ cup(60 ml) 
  • Water ¼ Cup and add as needed (chilled water) 
  • Ghee for frying

To Prepare Sugar Syrup:
  • Sugar 1 Cup
  • Water ¾ Cup
  • Saffron few strands
  • Cardamom Powder ¼ Tsp
  • Lemon Juice 1 Tbsp

Instructions:
To Prepare the Dough:
  • In a mixing bowl, pour ghee and yogurt and beat for a couple of minutes or until ghee and yogurt mix well. 
  • Now add sifted all-purpose flour, baking powder, salt, and a pinch of baking soda. 
  • Mix all well and knead for 2-3 minutes to make the dough. 
  • Now add chilled water 2-3 tbsp and knead the soft dough gently(add water as needed). 
  • Cover the dough and let it sit aside for 10-15 minutes. 

To Prepare Sugar Syrup:
  • In a pan, add sugar and water, mix well and bring it to boil on a medium flame.
  • Add cardamom powder, saffron strands, and lemon juice and mix well.
  • Keep stirring and check its consistency after 4-5 minutes.
  • It takes approximately 8-9 minutes to get one string/one thread consistency. 
  • To check the sugar syrup consistency, dip a spatula in the syrup and lift out. 
  • Allow it to cool for a few seconds(as it will be very hot at first). 
  • Now touch the syrup with a forefinger and thumb together and pull apart gently.
  • One-thread consistency is when a single thread is formed when your forefinger and your thumb are pulled apart gently.
  • One string consistency sugar syrup is ready, keep it aside.


To Roll and Fry Balushahi:
  • After 15 minutes, take the dough and flatten it. 
  • Divide it into two parts and fold to form the dough. 
  • Again flatten the dough and divide it into two and fold them, do the same for 5-6 times. 
  • Lastly, divide the dough into 18 equal parts. 
  • Roll and flatten the dough ball in between palms and press it to make an indent/depression with your thumb on both sides.
  • Heat ghee in a pan and fry the dough balls in hot ghee(The flame should be low else your Balushahi will not get cooked on the inside). 
  • Turn them over twice and fry till they turn a golden-brown color. 
  • Each batch takes approximately 35-40 minutes to fry completely. 
  • Take out fried Balushahi and place it on a kitchen napkin to remove excess ghee.
  • Let it cool and keep aside. 

To Assemble the Balushahi:
  • Drop fried balushahi into the sugar syrup and let it soak up the sugar syrup for 10-15 minutes. 
  • Drain excess syrup and transfer the balushahi on the plate. 
  • Let it dry for some time. 
  • Garnish with pistachios, and it's ready to munch. Enjoy!!! 

Dietary Comment:
  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 142 calories, along with 20.15 g carbohydrates, 6.8 g fats, and 1.67 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.

Good Time To Eat:
            It is good to eat Balushahi as a dessert.
