How to Make Sprouts in Instant Pot

Hello Foodies,
         Here are my simple and easy steps with tips to make moth beans sprouts or modachi matki using Instant Pot at home. Sprouting involves soaking seeds, beans, legumes or grains for several hours and then keep in a dry, warm place until they begin to develop a tail-like protrusion. Sprouting beans, grains can make them sweeter. The sprouting process takes a day which significantly increases vitamin and mineral availability. 



It can be a super healthy addition to your daily meals. While you have a variety of legumes to choose from, there is a technique to get it right. Sprouting may look like an easy process, but it needs the correct method and precision to extract all the goodness. Sprouting is a process where seeds and legumes are germinated and eventually eaten raw or cooked. When seeds are soaked in water for a specific time, they grow, causing their outer layers to tear open and allowing a young shoot to blossom. Sprouted grains, legumes, and beans are very nutritious and healthy. So, grow Sprouts in your Instant Pot!

Why I Used the Instant Pot for Sprouting Beans?
Yogurt setting of the Instant Pot works wonderfully for making sprouts.
Beans need warm, moist, and humid environments to sprouts and instant pot creates it.
The yogurt function of the instant pot helps to speed up the whole process considerably.
Once they are Sprouted, here are some recipes to make them-

Ingredients:
  • Moth Beans 1 Cup
  • Hot water as needed
Instructions:
  • Clean moth beans and wash cleaned beans in water until the water runs clear.
  • Now, soak washed beans in boiled and cooled or hot or warm water 2-3 cups for at least 6-8 hours.
  • After 6 hours, drain the water and wash 
  • Pour the soaked moth beans into a colander or in a muslin cloth or a wire mesh basket.
  • Place the colander into the Instant Pot and close the lid.
  • Sprouts the beans on yogurt mode and allow the beans to rest there for 9 hours or overnight.
  • After 9 hours check if beans have sprouted or not.
  • If you would like longer sprouts then again turn on yogurt function for 8 hours.
To Cook Sprouts in Instant Pot:
  • Add sprouted beans into the instant pot.
  • Pour 2 cups of water, and add turmeric 1 tsp.
  • Close the lid and place the vent on sealing mode.
  • Cook on Manual Mode(Low) for 2 minutes.
  • NPR for 5 minutes and then release the remaining pressure manually.
  • Open the lid and drain the water.
  • Add some salt and sprouts are ready to eat.


Tips to Soak the Beans:
  • Clean the moth beans thoroughly and discard stones or debris.
  • Wash cleaned beans in water until the water runs clear.
  • Lastly, wash beans in warm water.
  • Now, soak washed beans in boiled and cooled or hot or warm water for at least 6 hours.
  • Soaking softens the hull, allowing the sprouts to grow.
  • The skin of the bean must be broken, and that's the perfect time to begin sprouting them.
  • Before beginning the sprouting, drain them in a colander(let the drain all the excess water). 
  • The beans will expand as they soak and take up even more space as they sprout, so give them plenty of space in the colander. 

Why don't some of the moth beans sprout?
  • Certain moth beans are too hard so that they don't sprout and can be identified when nibbled.
  • Also, they don't sprout because they are too old.
  • Or a few days ago directly dried from the harvest.
Storage and shelf life of Sprouted Moth Beans?
  • Sprouted Moth beans stay fresh for 2-3 days in the refrigerator if kept in an airtight container.
  • It is good to consume them fresh.

Why is sprouting beans, seeds, and legumes is important?
  • Many seeds, beams contain anti-nutrients substances that inhibit the absorption of the other nutrients.
  • Antinutrients make nutrients less bioavailable, and sprouting can disable them.
  • Hence, sprouting, soaking like pre-treatment methods can be used to enhance the bioavailability of nutrients.

How to use Sprouts in different recipes?
My Take:
  • Soak the moth beans for 6-8 hours.
  • If you're sprouting seeds or beans with a hard coating, then soak them for 12-20 hours.
  • Sprouting generally takes 1 to 5 days.
