How to Use Leftover Rice(Masala Bhat)

          Looking for some easy leftover rice recipes? Here is an amazing way to use up leftover rice. So before you throw out the excess, take a look at this recipe. This masala rice is a simple dish made from leftover rice. I made this super random Masala Rice for breakfast using up my leftover rice from dinner the night before! So I transform this rice into hearty veggie masala rice by adding a few other ingredients. 

Hearty veggies and rice are great for a substantial, protein packed-breakfast. Since the rice is already cooked, you can have this on the table in 10 minutes flat. Or you can serve them for lunch, snacks, or dinner. This is a fantastic dish for vegetarians, which is packed with flavor and healthy veggies. It might look simple, but this recipe for leftover rice is addictive too. After all, there’s no better time than right now to make use of leftovers & reduce food waste.

We love Veggie Masala Rice, Because-

Preparation Time: 10 Minutes; Cooking Time: 10 Minutes.
Each Masala Rice Contains 231 Cal.

Ingredients:

  • Rice 3 Cups(cooked/leftover rice)
  • Onions 2 small, finely chopped
  • Green Bell Pepper /Capsicum 1, finely chopped 
  • Tomatoes 2 medium, finely chopped 
  • Ginger-garlic paste 1 Tbsp 
  • Lemon Juice 2 tbsp
  • Pav Bhaji Masala 1 Tbsp 
  • Red Chilli Powder 1 Tbsp 
  • Salt to taste
  • Coriander Leaves for garnishing 
  • Butter 3 Tbsp
  • Water ¼ cup

Instructions:

  • Heat butter in a pan and add finely chopped onions. 
  • Saute and cook onions for 2-3 minutes or until it becomes translucent(Don't brown the onions).
  • Now, add finely chopped green pepper and saute and cook for 2-3 minutes. 
  • Add ginger-garlic paste, finely chopped tomatoes, and cook until tomatoes turn soft and mushy. 
  • Now, add red chili powder, pav bhaji masala powder, lemon juice, and salt and mix well and cook for another 2 minutes or until the raw smell of the mixture goes away.
  • Pour water and cook for a minute or until the bhaji thickens and garnish with coriander leaves.
  • Add leftover rice, mix well and cook for a minute or two. 
  • Garnish with coriander leaves, sev, boondi, and Masala Rice is ready to Serve. Enjoy!!! 

Tips:

  • Make it spicy or less as per your taste.
  • Leftover / days-old rice works best to make masala rice.
  • If you don’t have green bell pepper then make it with yellow or red ones.
  • You can serve by adding some grated cheese on top to get the cheesy flavor.
